An Easy & Creamy Italian Chicken and Rice Casserole with Garlic Butter
There’s something about Italian dinners that always feels special, even when the ingredients are super simple. That’s what I love most about them.
It’s not about using fancy or exotic stuff—it’s about pulling together everyday ingredients and making them taste amazing. This creamy Italian chicken and rice casserole with garlic butter is exactly that kind of dish.
Weeknight Garlic Chicken and Rice Casserole with Creamy Sauce
It’s the kind of meal that makes the whole house smell incredible while it’s baking, and it only takes a few steps to put together. One of my favorite things about it is how much flavor you get from something as basic as garlic and butter.
When those two melt together, they turn even a plain dinner into something rich and comforting. Add a little cream, some herbs, and a bit of parmesan on top, and suddenly you've got a dish that feels like a warm hug on a busy weeknight.
I usually make this with chicken thighs because they’re easy to cook, they stay juicy, and they’re way more forgiving than chicken breasts.
Chicken Breasts can dry out fast in the oven, but thighs always come out tender and flavorful. Plus, they soak up all the garlic butter and creamy sauce so well.
Comforting Casseroles are always a winner
This casserole is a hit with everyone in my house, especially the kids. It’s cheesy, creamy, and has that baked-in comfort food feel that makes it hard to resist. The rice comes out soft and flavourful, and the little crispy bits around the edges of the pan are always the first to disappear.
If you’re not in the mood for rice, you can totally swap it for pasta instead.
I’ve done it with rotini and penne, and both turned out great. Just make sure to cook the noodles al dente before adding them in.
You don’t want to use raw pasta—it won’t cook through in the oven like rice does. Even spaghetti works if you break it up a bit.
This is one of those recipes I keep coming back to, especially on nights when I want something cozy without too much effort.
It’s simple, reliable, and full of flavor. Whether you stick with rice or switch it up with pasta, this garlic butter chicken bake is one of those dinners that feels like home.

🍗 Ingredients needed:
Here’s your ingredient list
- Chicken thighs – I love using thighs because they stay juicy and flavorful even after baking. You can use Bone in or Bone less.
- Olive oil – A drizzle of this adds richness and helps the chicken get a nice sear.
- Cream cheese (block) – This melts into the dish and gives the sauce that creamy, tangy base I can’t resist.
- Garlic powder – I use this for a deep, mellow garlic flavor that blends smoothly into the sauce.
- Onion Powder - balances the sharpness of garlic
- Garlic cloves – I like adding fresh garlic for that bold, aromatic kick you can actually bite into.
- Italian seasoning – This mix instantly brings out that warm, herby Italian comfort I’m going for.
- Parmesan – I toss this in for its nutty sharpness and the lovely golden crust it gives on top. Always use freshly grated Parmesan Cheese of premium quality.
- Chicken Broth - Low sodium Chicken Broth
- Long Grain White Rice – I use this because it cooks evenly, stays fluffy, and soaks up the sauce beautifully without getting mushy. It’s also neutral in flavor, which lets all the garlic butter and herbs shine.
- Unsalted butter – I use half of it, melted and rest I simply cut cubes of this and add to the casserole.
- Heavy cream (or half and half) – I pour this in to make the sauce silky and rich, but still pourable.
- Cornstarch + water – I mix this in to gently thicken the sauce until it hugs the chicken and rice just right.

📝 Possible Variations
- Swap rice for pasta
Don’t feel like rice? Use pasta instead! Just cook it al dente before adding it to the dish—penne, rotini, or even broken-up spaghetti all work great. - Use rotisserie chicken
Short on time? Shredded rotisserie chicken is a total lifesaver and blends right into the creamy sauce. - Make it spicy
Add a pinch of red pepper flakes or a dash of chili oil to the garlic butter for a little kick that warms things up. - Add spinach or kale
Toss in a couple handfuls of fresh spinach or chopped kale before baking. It wilts beautifully into the dish and adds a little green goodness. - Try it with mushrooms
Sautéed mushrooms mix in perfectly and give the casserole a deep, earthy flavor that pairs well with garlic and cream. - Swap cream cheese for mascarpone
Want a slightly more delicate, velvety flavor? Mascarpone is super creamy and makes the dish feel extra special. - Go low-carb with cauliflower rice
For a lighter version, use cauliflower rice instead of regular rice. Just keep in mind it won’t need as much liquid or baking time. - Make it extra cheesy
Mix in shredded mozzarella or provolone with the parmesan if you want that stretchy, melty cheese pull in every bite. - Try turkey or sausage instead of chicken
Ground turkey or crumbled Italian sausage can give the dish a fun twist—just cook it before adding to the casserole. - Add sun-dried tomatoes or olives
A handful of chopped sun-dried tomatoes or sliced black olives adds a little tang and really brings out the Italian vibes. Try this Healthy Creamy Tuscan Chicken Recipe.
