Keto Buffalo Chicken Casserole is a healthy and low-carb Casserole recipe for dinner. This easy and delicious Casserole recipe is creamy, cheesy and so amazing. This Creamy Buffalo Chicken Casserole has a Cauliflower base, is topped with Cheddar Cheese, and finally served with Ranch dressing and hot sauce on top. This Keto Buffalo Chicken Casserole gets ready in just 15 minutes.

This Keto Buffalo Chicken Casserole is like a favorite version of Mac and Cheese, but even better. I know, there can be nothing better than Mac and Cheese but trust me, this is.

Also, this is low-carb and keto-friendly, which means yay! You can stay out of those Unhealthy calories which you do not want and enjoy a filling and delicious meal without any stress.

I just love love love this Keto Buffalo Chicken Casserole recipe. It makes for a perfect dinner recipe for busy weeknights. I generally prep this recipe in the morning and when I am back home, I bake it just before dinner and serve this with some Roasted Veggies or Roasted Chicken.

The best part is, it's family-friendly. I think the biggest concern we all have while taking up dieting is that what to make for the family. Well, then you have recipes like this one, which you can enjoy with the family and no one will complain ever!

My kids loved this recipe. It's such a fun dinner recipe for the family, perfect for weeknights. We love to enjoy these with some Chicken Drumsticks.

Creamy Buffalo Chicken Casserole

This Buffalo Chicken Casserole is undoubtedly so creamy and comforting. The best part is of course the Ranch Buffalo dressing on top. It brings the perfect heat and creaminess to this recipe. This is a perfect Whole 30 and Paleo recipe for dinner.

Buffalo Chicken Casserole with Cauliflower

This Buffalo Chicken Casserole uses small Cauliflower florets instead of Cauliflower rice. Sure you can use Cauliflower rice. But I like to use fresh Cauliflower for this recipe. For one thing, it gives a chunky bite to this casserole and feels like Mac and Cheese.

And secondly, Cauliflower Rice makes this Casserole way too watery and moist. So, it's always easy to use Fresh Cauliflower which is cut into bite-sized chunks and resembles Elbow Macaroni Noodles.

A perfect weeknight dinner recipe

This Keto Buffalo Chicken Casserole makes for a great weeknight dinner. I like things a little comforting and quick especially on busy weeknights. You can use Rotisserie Chicken as well or precooked Shredded Chicken for the recipe. Honestly, I just use leftover Chicken Breasts. I just chop them up and toss them with the sauce ingredients and dump them together until baked to perfection.

That's what I love about this recipe. A basic dump and forget dinner which is always a family favorite.

Ingredients needed to make Buffalo Chicken Casserole

  • 2 lbs Chicken Breasts chopped to 1-inch cubes
  • 1 large Cauliflower Head chopped
  • 1 tablespoon Extra Virgin Olive Oil
  • 1 Medium Sized Onion finely chopped
  • 5 cloves Garlic minced
  • 4 oz Cream Cheese
  • 1½ cup Shredded Cheddar Cheese divided
  • ½ cup Monterrey Jack Cheese
  • ½ cup Hot Sauce
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 cup Heavy Cream

For Garnish

  • Chopped Cilantro
  • Chopped Green Onions
  • Hot Sauce
  • Ranch Dressing

How to make Buffalo Chicken Casserole

Below is a brief description of the recipe. You can find the detailed recipe below and watch the video for a visual.

STEP 1: Boil the Cauliflower

  • Chop the cauliflower into small florets
  • Boil with water for 5 minutes
  • Drain the water and rinse with tap water
  • Keep it aside.

STEP 2: Make the Casserole

  • In a pan, heat some Olive Oil.
  • As the oil shimmers, add the chopped onion and minced garlic
  • Saute them until they get fragrant for 2 minutes over medium-low heat
  • Next, add the Cream Cheese, 1 cup of Cheddar Cheese, Monterrey Jack Cheese, Heavy Cream, Hot Sauce, Chicken, Salt & Pepper.

  • Toss to combine everything.

STEP 3: Add the Cauliflower

  • Add the Cauliflower. Toss to combine everything.
  • Take it out in a baking dish.

  • Top with more Cheddar Cheese
  • Bake for 15-20 minutes or until the cheese melts on top.

STEP 4: Garnish & Serve

  • Garnish with chopped Cilantro, Hot Sauce, and Ranch Dressing.
  • Serve hot.

Other Possible Variations to this recipe

Keto Buffalo Chicken Casserole
  • You can use Blue Cheese dressing instead of Ranch
  • To make this even spicier, include some roasted red pepper flakes or more hot sauce in the recipe.
  • You can replace Heavy Cream with Coconut Cream for even better flavors.

INGREDIENTS

  • 2 lbs Chicken Breasts chopped to 1-inch cubes

INSTRUCTIONS

  • Chop the cauliflower head into small bite-sized florets. Bring a pot of water to boil and add the chopped Cauliflower. Allow it to boil over medium-low heat for 5 minutes. After the Cauliflower tenderizes, take them off the pot, drain the water and rinse the Cauliflower with tap water. Keep it aside.
    Preheat the oven to 350F or 180C.
  • Heat some Extra Virgin Olive Oil in a Pan. As the oil shimmers, add the chopped Onion and minced Garlic. Saute the Onion and Garlic until they get fragrant for about 2 minutes.
    Next, add the Cream Cheese, 1 cup of shredded Cheddar Cheese, Monterrey Jack Cheese, Chicken, Hot Sauce, Heavy Cream, Salt & Pepper. Toss to combine everything
  • Add the Cauliflower to this mixture. Toss to combine everything. Transfer to a casserole baking dish. Top with remaining Cheddar Cheese. Bake at 350F or 180C for 15 -20 minutes.
  • Garnish with chopped Cilantro, more Hot Sauce, and Ranch Dressing. Serve hot
