I just love love love this Keto Buffalo Chicken Casserole recipe. It makes for a perfect dinner recipe for busy weeknights. I generally prep this recipe in the morning and when I am back home, I bake it just before dinner and serve this with some Roasted Veggies or Roasted Chicken.

Buffalo Chicken Casserole with Cauliflower
This Buffalo Chicken Casserole uses small Cauliflower florets instead of Cauliflower rice. Sure you can use Cauliflower rice. But I like to use fresh Cauliflower for this recipe. For one thing, it gives a chunky bite to this casserole and feels like Mac and Cheese.
And secondly, Cauliflower Rice makes this Casserole way too watery and moist. So, it's always easy to use Fresh Cauliflower which is cut into bite-sized chunks and resembles Elbow Macaroni Noodles.
A perfect weeknight dinner recipe
This Keto Buffalo Chicken Casserole makes for a great weeknight dinner. I like things a little comforting and quick especially on busy weeknights. You can use Rotisserie Chicken as well or precooked Shredded Chicken for the recipe. Honestly, I just use leftover Chicken Breasts. I just chop them up and toss them with the sauce ingredients and dump them together until baked to perfection.
That's what I love about this recipe. A basic dump and forget dinner which is always a family favorite.

Ingredients needed to make Buffalo Chicken Casserole
- 2 lbs Chicken Breasts chopped to 1-inch cubes
- 1 large Cauliflower Head chopped
- 1 tablespoon Extra Virgin Olive Oil
- 1 Medium Sized Onion finely chopped
- 5 cloves Garlic minced
- 4 oz Cream Cheese
- 1½ cup Shredded Cheddar Cheese divided
- ½ cup Monterrey Jack Cheese
- ½ cup Hot Sauce
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 1 cup Heavy Cream
For Garnish
- Chopped Cilantro
- Chopped Green Onions
- Hot Sauce
- Ranch Dressing
How to make Buffalo Chicken Casserole

STEP 1: Boil the Cauliflower

- Chop the cauliflower into small florets
- Boil with water for 5 minutes
- Drain the water and rinse with tap water
- Keep it aside.
STEP 2: Make the Casserole
- In a pan, heat some Olive Oil.
- As the oil shimmers, add the chopped onion and minced garlic
- Saute them until they get fragrant for 2 minutes over medium-low heat
- Next, add the Cream Cheese, 1 cup of Cheddar Cheese, Monterrey Jack Cheese, Heavy Cream, Hot Sauce, Chicken, Salt & Pepper.


- Toss to combine everything.
STEP 3: Add the Cauliflower

- Add the Cauliflower. Toss to combine everything.
- Take it out in a baking dish.

- Top with more Cheddar Cheese
- Bake for 15-20 minutes or until the cheese melts on top.

STEP 4: Garnish & Serve
- Garnish with chopped Cilantro, Hot Sauce, and Ranch Dressing.
- Serve hot.

After the Cauliflower tenderizes, take them off the pot, drain the water and rinse the Cauliflower with tap water. Keep it aside. Preheat the oven to 350F or 180C.
- Heat some Extra Virgin Olive Oil in a Pan. As the oil shimmers, add the chopped Onion and minced Garlic. Saute the Onion and Garlic until they get fragrant for about 2 minutes.Next, add the Cream Cheese, 1 cup of shredded Cheddar Cheese, Monterrey Jack Cheese, Chicken, Hot Sauce, Heavy Cream, Salt & Pepper. Toss to combine everything
- Add the Cauliflower to this mixture. Toss to combine everything. Transfer to a casserole baking dish. Top with remaining Cheddar Cheese. Bake at 350F or 180C for 15 -20 minutes.
- Garnish with chopped Cilantro, more Hot Sauce, and Ranch Dressing. Serve hot
