Fresh olives, good wine, excellent pasta, and of course, creamy, hearty Tuscan chicken create a loving picture of Tuscany in the mind.
And this Low carb healthy high protein Tuscan chicken is my humble tribute to that picturesque memory of mine.

Simple Tuscan Chicken recipe
Tuscan flavors and Tuscan recipes are simple. No heavy sauces. Unlike other recipes, the cooking is done in the best quality olive oil.
The Tuscan flavors try to incorporate local produce. And therefore, they try to keep it authentic to the land.
What are Tuscan Flavours?
Quite similar to Italian seasoning but just a wee bit different. When you think of typical Tuscan flavors, think of fresh rosemary, thyme, oregano, basil, and, last but not least, fennel seeds. Also, count in fresh garlic.

Tuscan Chicken ingredients
to season the chicken
- 1 lb Lean Chicken Breast
- 1 tsp Dried Basil
- 1 tsp Red Pepper Flakes
- 1 tsp Garlic Powder
- Salt & Pepper
- 1 tsp Olive Oil
- 1 tsp Smoked Paprika
- 1 cup Spinach
- 1/4 cup sun-dried tomatoes (packed), drained and chopped
- 1 cup Cherry Tomatoes
for the sauce
- ½ cup Low Fat Milk
- 1 tbsp Low Fat Cream Cheese
- ½ cup Reduced Fat Parmesan Cheese
- 1 tbsp Tomato Paste
- fresh basil to garnish
How to Make Tuscan Chicken
Step 1: Chop Chicken breast into small 1-inch cubes or bite size chunks.
Step 2: Season Chicken breasts with dried basil, red pepper flakes, garlic powder, salt & pepper, smoked paprika, and olive oil.
Step 3: Heat a skillet. Add chicken breasts, and cook on medium-low heat for 4-5 minutes.
Step 4: Add low-fat milk, cream cheese, reduced-fat parmesan cheese, and tomato paste to the blender. Blend to make a smooth and creamy sauce.
Step 5: Pour the sauce over the cooked chicken. Add sun-dried tomatoes and chopped cherry tomatoes. Cover and cook over low heat for four more minutes.
Step 6: Once the chicken gets cooked, serve this creamy Tuscan Chicken. Garnish with some freshly chopped Basil and enjoy with cooked rice or pasta.

Recipe Variations
- After you've sauteed the chicken breasts, you can remove them from the skillet. Add chopped white or brown mushrooms to the same skillet, and cook until fragrant and browned.
- If you don't mind extra calories, another flavorful option would be to coat chicken in beaten egg and then in a mixture of flour, dried basil, red pepper flakes, garlic powder, salt & pepper, and smoked paprika.
- While making the sauce for Tuscan chicken, add 1/3 cup of white wine and about 240 ml or a cup of chicken stock (low sodium).
How long can Tuscan chicken stay in the fridge?
It's best eaten on the same day. But if you want to store this, here's what you can do:
Refrigerate:
Transfer to an airtight container. Refrigerate for up to 2-3 days. Make sure you thaw it before reheating and serving.
Freeze:
To freeze Tuscan chicken, transfer it to an airtight container. Double wrap with aluminum foil and plastic wrap to prevent freezer burns. You can store it up to 3 months in the freezer.
Reheating & Serving:
Thaw the chicken in the refrigerator overnight. Transfer to the oven with a bit of water or chicken stock. Preheat oven to 350 degrees F and heat chicken for 10-12 minutes.

The creamy Tuscan chicken sauce is made up of low-fat milk, low-fat cream cheese, reduced-fat parmesan cheese, and tomato paste. At least this is how I like to make my Tuscan chicken sauce. But of course, there are many variations to the same.
What do you have Tuscan chicken with?
Since you have a creamy and flavorful sauce, I like to serve this with homemade basmati rice.
Sometimes when I don't want to eat rice, I like to serve my Tuscan chicken with some fresh salads, such as Blueberry Salad with Broccoli and Avocado or Cucumber Salad or Easy Spinach Salad
How to cook chicken breasts faster?
There is no magic pill to cook chicken breast faster. But you can get the basics right and every time you'll have perfectly cooked chicken breast in less than 8 to 10 minutes.
- Use a meat mallet to pound chicken breast evenly from all sides.
- The chicken breast should be at least 1/2 inch thick from all sides.
- Cook on medium-low heat for 4-5 minutes per side.

- 1 teaspoon Dried Basil
- 1 teaspoon Red Pepper Flakes
- 1 teaspoon Garlic Powder
- Salt & Pepper
- 1 teaspoon Olive Oil
- 1 teaspoon Smoked Paprika
- 1 cup Spinach 40gm or 1.4oz
- ¼ cup sun-dried tomatoes (packed), drained and chopped
- 1 cup Cherry Tomatoes 100gm or 9Oz
for the sauce
- ½ cup Low Fat Milk 350ml or 11.8oz
- 1 tablespoon Low Fat Cream Cheese
- ½ cup Reduced Fat Parmesan Cheese 44gm or 1.5oz
- 1 tablespoon Tomato Paste
- fresh basil to garnish
INSTRUCTIONS
- Chop the Chicken Breast into bite-sized chunks.
- Season the Chicken Breast with Garlic Powder, Smoked Paprika, Dried Basil, Red Pepper Flakes, Olive Oil, Salt, and Pepper.
- Add the chicken to a skillet and cover cook over low heat for 4-5 min.
- Add low-fat milk, low-fat cream cheese, reduced-fat parmesan cheese, sun-dried tomatoes, and tomato paste to the blender. Blend to make a smooth and creamy sauce.
- Pour the sauce over the cooked chicken. Cover cook over low heat for 4 more minutes.
- Once the chicken gets cooked, serve this creamy Tuscan Chicken. Garnish with some freshly chopped Basil and some chopped cherry tomatoes enjoy with cooked rice or pasta.
