Loaded with fresh ingredients in every bite you simply cannot go wrong with this corn broccoli salad.

Broccoli Salad Recipe

Who doesn't love homegrown broccoli. right? I visited my folks the other day. And did I ever happen to tell you about my Dad who loves farming.

He's always busy importing seeds, storing them in the fridge, checking the conditions of soil, looking deep into the leaves of plants (trying to talk to them maybe) and spending hours and hours in the farm.

After retirement, playing with his pet, farming, and eating home grown veggies has become his daily routine.

Back in the day, when my dad was in the army, he used to visit various countries all the time. And, rather than getting gifts for us, he would buy seeds of exotic vegetables! Can you actually believe that??

We used to be so pissed at him then. But, then that's his calling and he loves homegrown veggies.

So, last week he handed me over this beautiful green broccoli along with a few green, firm, and sweet zucchinis.

Broccoli Corn Carrot Salad

Now there are a numerous ways you can make your Broccoli Salad. I prefer keeping the ingredient list simple, low in carb, and high in protein.

Many prefer adding bacon to make it Broccoli Corn Bacon Salad. While some people prefer cauliflower florets and some prefer mushrooms or avocados.

I personally love avocados and I love Mexican food. I really regret it not adding them to my broccoli salad. Make sure you do add avocados to make the most amazing Mexican corn and broccoli salad.

Ingredients to make Broccoli and Sweet Corn Salad

To make this Broccoli and Sweet Corn Salad you'll need these ingredients:

  • Broccoli
  • Sweet Corn
  • Cranberries
  • Carrots
  • Cherry Tomatoes

For the dressing you'll just need:

  • ranch dressing
  • mayonnaise
  • garlic powder or minced garlic cloves

How to make Corn and Broccoli Salad

STEP 1: Chop Broccoli into small florets

Place the broccoli with the steam facing up on a sturdy cutting board. Use a sharp knife to separate the florets from the crown. Try and leave at least 1-inch stem or each florets.

STEP 2: Combine the veggies in a bowl

In a large mixing bowl combine broccoli florets with carrots, sweet corn, cranberries, and cherry tomatoes.

STEP 3: Make the dressing

In a pyrex glass measuring jar combine ranch dressing with mayonnaise and some crushed garlic cloves. Mix well.

STEP 4: Pour the dressing

Finally, Pour the dressing on the salad. Stir well. And your broccoli corn salad is served.

INGREDIENTS

Ingredients to make the salad

  • 1 head broccoli (fresh) cut into florets
  • 1 cup cherry tomatoes (or roma tomatoes) halved
  • 1 can (15 oz) sweet corn or cooked corn from 1 large ear
  • 1 large carrot grated
  • ½ cup dried cranberries

Make Dressing

  • 5 Tablespoon Ranch Dressing
  • 5 tablespoons mayonnaise
  • 1 tablespoon pressed garlic
Prevent your screen from going dark

INSTRUCTIONS

  • Cut broccoli into florets. Place them in a oven-safe mixing bowl. Microwave with some water on HIGH for 2-3 minutes. Drain the water and keep aside.
  • In a large mixing bowl combine steamed broccoli with all other ingredients for the salad.
  • Make the dressing. Combine ranch dressing, mayonnaise, and pressed or minced garlic cloves.
  • Pour the dressing on the salad. Give it a good mix. Refrigerate. Serve cold.
