Especially during September and October, I try to include Pumpkin in many of my recipes. Pumpkin is obviously a healthy choice for fall recipes. Moreover, Pumpkin makes for some really good and easy fall recipes as well.

This recipe for Pumpkin Waffles was inspired from my Easy Pumpkin Bread Pudding with Caramel Sauce & White Chocolate Chips recipe which is really loved and makes for a great holiday and fall breakfast recipe.

Ingredients for Gluten Free Pumpkin Waffles
So Pumpkin when baked really makes everything very dense and weighs it down. So to make it light and fluffy you add ingredients like Eggs and Flour to it.
This Pumpkin Waffles recipe is a gluten free recipe so I have used Oats flour.
You can replace Oats Flour with All Purpose flour for these Pumpkin Waffles recipe as well.
- Oats Flour: You can replace with Coconut Flour or Amaranth flour or Buckwheat flour or any other gluten free flour.
- Pumpkin Puree: Use homemade Pumpkin Puree or store bought one
- Pumpkin Pie Spice: Use homemade or purchased
- Ground Cinnamon, Cardamom, Cloves: Adds a perfect light spice to the pumpkin waffles.
- Eggs: Use eggs to make the waffles batter. It helps hold the ingredients together and make the waffles fluffy
- Buttermilk: Use buttermilk to make fluffy and soft pumpkin waffles
- Salt, Softened Butter, Baking powder: the usual ingredients to bake waffles or pancakes

How to make Pumpkin Waffles (step by step instructions)
There are two ways of making Pumpkin Waffles. You can use a standard waffle maker or make Belgian Pumpkin Waffles which are thick with deep pockets.
I prefer Belgian Waffle maker as they are thick with deep pockets, soft and fluffy. While if you have a Standard Waffle Maker, it will yield Waffles which are about 1/2 inch thick which is fine as well

Combine Oats Flour with Ground Spices, Pumpkin Pie Spice, Salt, Baking Powder and Soda. Whisk and set aside.

Add the wet ingredients - Pumpkin Puree, Granulated Sugar, Softened Butter, Oil, Eggs to the mixture and whisk until combined and lump free.

Lightly brush oil in the waffle iron. Add the batter and cook as per instructions.

Serve with maple syrup and whipped cream on top.
Remember that to make standard waffles add about 1/2 cup of the batter and to make Belgian Waffles, you need to pour about 1 1/2 cup of the batter.
Hint: Keep the waffles in the oven preheated at 250F to keep warm until you serve!

How to make Pumpkin Waffles with pancake mix?
You can easily turn a Pancake mix into waffle mix. Yes! Its easily replaceable and you will absolutely love waffles made with pancake mix. All it needs is a little fat in the mix. I use Coconut Oil in the mix and waffles comes out perfectly!
So for every cups of Pancake mix you will need to add about 2 tablespoon of oil or butter to turn it into a waffle mix.
How to make pumpkin Waffles with bisquick?
Yes! Bisquick mix can be used to make waffles. You simply need to combine Bisquick mix with milk, eggs, oil, sugar and baking powder! And its done! Your Bisquick Waffle mix is ready.
Bisquick Pumpkin Waffles are really the easiest way to make waffles for a quick Sunday Breakfast or Brunch for fall or Thanksgiving.

You can easily freeze waffles and store them for a long time. Just wrap each individual waffles with parchment paper and store the stack in an airtight freezer friendly bag. You can freeze waffles for up to 3 to 4 months.
Reheating waffles
There are a couple of ways to reheat waffles. The best part is that you do not have to thaw the waffles before reheating.
- Microwave: Place the waffles in a microwave safe dish and reheat in the oven until heated through.
- Oven: Preheat the oven to 350F and place the waffles in a parchment paper lined dish. Bake for 10-15 min. This will make the waffles turn crispy!
- Air Fryer: Place the waffles in the air fryer and cook for 10-12 min at 350F
- Toaster: Lastly if your waffles fit into a toaster, then just toast until heated through.
Vegan Pumpkin Waffles
Vegan Waffles are so easy to make. You just need to use Almond Milk or Oat milk as a replacement for regular mix to make the vegan waffle mix.
Besides that all other ingredients remain the same.
Top Tips to make the Best Pumpkin Waffle Recipe
- Add the batter when the iron is hot: Majority of the times of your waffles aren't coming out crispy. They are rather soft and pale, its because the waffle iron wasn't hot enough to cook it perfectly. Remember this thumb rule to strike right when the iron is hot.
- Use oil along with butter: A trick I use to make waffles crispier is to add more of oil than butter. Oil has less moisture content in it than butter which makes the waffles come out crispier.

INGREDIENTS
- 1¾ cup Oat Flour can replace with coconut flour as well
- 1 tablespoon Baking Powder
- ½ teaspoon Baking Soda
- 3 tablespoon Granulated Sugar
- ½ teaspoon Kosher Salt
- 1 tablespoon Pumpkin Pie Spice
- ½ cup Pumpkin Puree 1/4 of the can if using purchased
- ½ teaspoon Ground Cinnamon
- ½ teaspoon Ground Ginger
- ½ teaspoon Ground Cardamom
- ½ teaspoon Ground Cloves
- 1 cup Vegetable Oil or (any neutral oil like Coconut Oil, Grapeseed Oil, Canola)
- 1 stick Butter softened
- 2 large Eggs
- ¾ cup Buttermilk or milk of choice
serve
- Whipped Cream
- Maple Syrup
- Pecan Nuts
INSTRUCTIONS
- Preheat the waffle iron to high heat
- In a medium sized mixing bowl, whisk together Oat Flour, Pumpkin Pie Spice, Ground Cinnamon, Cardamom, Ginger, Cloves, Kosher Salt, Baking Powder & Baking Soda.
- Add the Pumpkin Puree, Eggs, Oil, Butter, Buttermilk and Granulated Sugar. Mix well until combined.
- Pour this batter into the hot waffle iron and cook as per directions.
- Serve with maple syrup and whipped cream on top.
