Summer Creamy Coconut Chickpea Curry is a sweet and mild curry recipe, which is served over a bed of steamed rice and topped with some Lemon juice, Sour Cream, and Onion Rings, and chopped Chillies. This is an easy and comforting Chickpea dinner recipe that can be served with Coconut Rice or Naan bread.
The Summer season means an easy and lazy dinner which I can cook in no time. This Creamy Coconut Chickpea Curry has a sweet and coconutty taste to it. Also, the mild use of spices - cumin, salt, and pepper, actually helps bring out the authentic flavors of Chickpea and Creamy Coconut Milk.
I don't even use Curry powder or Turmeric or Cayenne Pepper in this recipe. Although, I am aware that many people use all of these, especially Curry Powder in making a Coconut Chickpea recipe.

This Creamy Coconut Chickpea Curry has a simple, earthy, sweet, and coconutty flavor to it. It feels so comforting! Also unlike the typical Indian Curry recipe, this one lacks the heat of the spices, but that's balanced by the sour cream, the lemon juice, the onion rings, and the chopped green chilis.
This Coconut Chickpea Curry has a creamy base to it and tastes amazing with some rice or naan bread.
How to make Creamy Coconut Chickpea Curry
So, to make this sweet and simple Coconut Chickpea Curry, you start by heating a wok or skillet and adding some Canola Oil to it. Next throw in some whole spices such as Cinnamon sticks (broken) and 1 Bay leaf.
As the bay leaf starts to turn brownish, add the Chopped Onions, followed by the chopped garlic. Cook these two until they turn light brownish. Add salt, ground black pepper, and Cumin at this point and mix well.
Next, add in the canned Chickpeas and the Coconut Cream. It'll be thick. Don't worry, when you mix it'll soon thin out and create a creamy texture. Also, add some Heavy cream to it and season with some more ground black pepper.
Cover cook your Coconut Chickpea curry for 5 minutes and you're done.
Serve it over a bed of steamed rice along with some Lemon juice on top, some Sour Cream, a few Onion rings, and some chopped green chilis.

Summer Creamy Coconut Chickpea Curry With Rice
INGREDIENTS
- 1 Cup Chickpea Canned
- 1 tablespoon Canola Oil
- 3 tablespoon Coconut Cream
- ½ Cup Heavy Cream
- 1 medium sized Onion chopped
- 4-5 cloves Garlic minced
- 1-2 sticks Cinnamon broken
- 1 whole Bay Leaf
- 2 tablespoon Cumin Powder
- 1 tablespoon Salt
- 2 tablespoon Black Pepper ground
INSTRUCTIONS
- Heat Canola Oil in a skillet. Add the whole spices and wait until they turn fragrant.
- Add the chopped Onions and Garlic and mix well. Add the Cumin, Salt and Ground Black Pepper to it and mix well.
- Add the Chickpeas, Coconut Cream, and Heavy Cream to it. Stir and mix it well. Top with some more Black Pepper Powder. Cover cook for 5-10 minutes.
- Serve over a bed of rice and top with some Sour Cream, Lemon Juice, Mint Leaves, Onion Rings, and some chopped Green Chilis.
