Here's Why I call this Magic Lemon Cobbler
So as much as its got the charm and warmth of nostalgia as this was my Grandma's recipe for Lemon Cobbler, I love it because its one of my favourite dessert and over the years I've perfected it with some changes which I absolutely love.

- The hint of Cream Cheese which I add to this gives this a lovely creamy Lemon Cheesecake kinda taste, enhances the tartness along with the creaminess.
- A hint of Ground Cardamon and Ginger Powder - these two are some magical spices which really elevates this simple Old Fashioned Lemon Cobbler to something extraordinary!! Trust me, its just too good.
- Crispy top is what I love. So taking notes from its closest relative, Crisp, I add just a bit of brown sugar, rolled Oats and cubed cold butter. Not a lot, just enough, so that the biscuit topping on top is crispy and crunchy on the top, but as you bite into it, its pillowy soft and moist.

This lemon cobbler came to life on a slow April afternoon when all I wanted was something sunny and soul-soothing. It was a very hot and humid day and you know how hot and humid it gets in India. After a long and boring day, I wanted to get into my kitchen and make something Lemon-y.
Why is it that afternoons, I crave something Lemon-y? Is it me or its universal. Well, let me know about that. I remembered the lemon pie filling tucked in the pantry, so I wasn't interested to bake a cake or anything.
My soul craved something easy but satisfying and when you want that kind of soul soothing dessert, you instantly think of Crisps and Cobblers. The kind of dessert you eat right out of the baking dish, standing at the counter, spoon in hand, with someone you love beside you.
And I never pre plan any recipe. So while mixing flour with butter and sugar and tasting the lemon pie filling all along, I thought, I want both the worlds so why not make it into a cobbler like my Grandma taught me. And that's how this dish was born.

Since then, I've baked this countless times for Open Houses, Gifts for friends, BBQ nights, Summer dessert parties, for friends and of course just for myself as well!! I hope it brings a little brightness to your day too.

Ingredients:
- 1 (21 oz) can of lemon pie filling – sweet and tangy, it’s the heart of the cobbler.
- 2 oz cream cheese, softened to room temp. – gives the batter a creamy tang that pairs beautifully with lemon.
- 1 cup unsalted butter (1/2 cup cold and cubed (for topping)) – , half to melt and mix with the flour mixture and rest to mix with rolled Oats so that it helps create that golden, flaky cobbler crown.
- 3/4 cup All-purpose flour – the base that holds our cobbler together.
- 1/2 cup Granulated sugar – for sweetness that balances the tart lemon.
- 1/4 cup brown sugar – adds a touch of caramel warmth.
- 1/4 cup rolled oats – for a lovely rustic crunch on top.
- 1/4 teaspoon salt – just a pinch to bring all the flavors into harmony.
- 1 teaspoon baking powder – gives the cobbler a gentle lift.
- 1/4 teaspoon ground ginger – a warm little zing that wakes up the citrus.
- 1/4 teaspoon ground cardamom – floral and citrusy, it adds depth to the flavor.
- 1/2 teaspoon vanilla extract – for a hint of mellow sweetness.
- 1/2 teaspoon lemon extract (optional) – extra zing if you're feeling it.
- 1 tablespoon fresh lemon juice – brightens everything up with natural tartness.
- 3/4 cup buttermilk – keeps the batter tender and adds a subtle tang.
- Confectioners’ sugar, for dusting – like a snowy kiss on top before serving.
How to make Easy Lemon Cobbler (Old Fashioned & Comforting)
- Mix the wet ingredients - In a mixing bowl beat Cream Cheese with granulated sugar, brown sugar, vanilla extract, and lemon extract.
- To this stir in the dry ingredients - flour, baking powder, salt, ginger, cardamom, buttermilk, lemon juice. Do not overmix the batter
- Pour this to the prepared baking dish. Spoon the lemon pie filling on top.
- In another bowl combine rolled oats with cold cubed butter and spread this mixture over the lemon pie filling evenly.
- Bake @350F for 20-25 min until the top gets perfectly golden brown.
- Let it cool completely, dust confectioner's sugar on top and serve.

INGREDIENTS
- 1 can Lemon Pie Filling 21oz
- 2 oz Cream Cheese softened to room temp.
- ½ cup Unsalted Butter cut into cubes (FOR TOPPING)
- ¼ CUP Rolled Oats for topping
- ¾ cup All Purpose Flour
- ½ cup Granulated Sugar
- ¼ cup Brown Sugar
- ¼ teaspoon Salt
- 1 teaspoon Baking Powder
- ¼ teaspoon Ground Ginger
- ¼ teaspoon Ground Cardamom
- ½ teaspoon Vanilla Extract
- ½ teaspoon Lemon Extract optional
- 1 tablespoon Fresh Lemon Juice
- ¾ cup Buttermilk
- Confectioner's Sugar to dust on top
- Whipped Cream for serving
INSTRUCTIONS
- Preheat the oven to 350F or 180C and grease a cobbler baking dish or 9x9" baking dish with butter.
- Mix the wet ingredients - In a mixing bowl beat Cream Cheese with granulated sugar, brown sugar, vanilla extract, and lemon extract.
- To this stir in the dry ingredients - flour, baking powder, salt, ginger, cardamom, buttermilk, lemon juice. Do not over mix the batter
- Pour this to the prepared baking dish. Spoon the lemon pie filling on top.
- In another bowl combine rolled oats with cold cubed butter and spread this mixture over the lemon pie filling evenly.
- Bake @350F for 20-25 min until the top gets perfectly golden brown and the lemon pie filling is oozing out from the cracks and edges.
- Let it cool completely, dust confectioner's sugar on top and serve.

Why would you use "lemon pie filling" from a can or box I assume. Now I have to look up lemon pie filling FROM SCRATCH. Maybe it would be the same recipe my mom used for lemon meringue pie (corn starch based).
You are not alone showing this ingredients but please, old fashioned to me is all from scratch.
Ps: I have 2 huge lemon trees I use for all my recipes and i am always looking for new lemon anything recipes. Otherwise I juice the lemons and freeze in ice cube trays. This year I am making lemon extract from scratch (an 8 week process) and find the zest freezes well too!
