Easy Lemon Cheesecake
This creamy and lemony Lemon Cheesecake takes just 15-minutes to get ready. Unlike other No-Bake desserts, this takes Zero freezing or refrigerating time.

This gets ready almost too quickly. You can refrigerate this until you serve and this is going to stay just as good. However, I like to enjoy it right at the counter after I've made it. You know there are recipes that you feel like tasting first and then sharing. Or more like, "I need to think about myself first"! right!!! 🙂

This Lemon Cheesecake is the best Lemon dessert ever. I have made this Lemon Cheesecake with some Sour Cream and it's that tartness of Sourcream which you will love about this mini Lemn Cheesecake.
I know, whenever we think about Lemon desserts, we like to go a little overboard with all the sugar. However, without using granulated sugar, I have used Sweetened Condensed milk because it's the best combination with Lemon juice and this is what makes these taste so AMAZING!
How to make Mini Lemon Cheesecakes (No-Bake)
Below is a brief description of the recipe. You can find the full recipe card below. Also, watch the video for a quick visual.
STEP 1: Making the Crust

- Combine Graham Cracker Crumbs with Melted Butter and Vanilla Extract
- Mix using a spoon until combined
- Layer it at the bottom of a glass
STEP 2: Making the Cheesecake

- Whip Cream until thick and creamy with stiff peaks
- In another mixing bowl, beat Cream Cheese until creamy
- Add Lemon Juice, Whipped Cream, and Sweetened Condensed Mik. Beat over medium-high speed until combined.

- Take this up in a piping bag with your favorite nozzle.
STEP 3: Making the Lemon Cheesecake frosting

- This Lemon Cheesecake frosting is the most amazing thing about this dessert
- Combine Whipped Cream with just 1 tablespoon of Sour Cream and beat until thick and creamy
- Take it up in a piping bag
STEP 4: Assembling the Lemon Cheesecake
- Finally, to assemble the Lemon Cheesecake
- Pour the Lemon Cheesecake filling over the graham cracker base. Fill until the top.

- Top with the Lemon Sour Cream frosting
- Decorate with few Lemon Rinds and Mint Leaves.

- Also, add some Almond slivers around the frosting for a nice little bite
- If you want you can also, decorate these cheesecakes with a few Raspberries or Strawberry slices.

Topping for Lemon Cheesecake
The topping is the favorite part to me about this Lemon Cheesecake. Generally, Lemon Cheesecake frosting is done with just some whipped cream. However, I personally dislike the excessive sweetness of whipped cream. So, I add a little bit of Sour Cream to this Cheesecake frosting.
This Sour Cream and Whipped Cream Cheesecake frosting make this tastes extra good and delicious!

Other Alternatives to this recipe
- This Lemon Cheesecake is served in a glass jar. However, you can make it in the muffin tin as well.
- To make this in the muffin tin, layer the crust and allow it to freeze for 30 minutes.
- Top with the filling and then freeze for 1-2 hours until set
- Top with the frosting.
- Decorate and serve.
I have made this Lemon Cheesecake with Philadelphia Cream Cheese. You can replace this with any other Cream Cheese you have however this will be your best option because it's extra creamy and good.
You can also make Lemon Cheesecake with Meringue frosting. Instead of the whipped cream and sour cream frosting, use Meringue to do the frosting.
Can you freeze this Lemon Cheesecake?

Yes, you can freeze this Lemon Cheesecake. However, the frosting with whipped cream might get a little watery once it gets thawed in the refrigerator. So, it is best to do the frosting right before you serve these Lemon Cheesecakes. You can store these No-Bake Lemon Cheesecakes in the freezer for up to 3 days. Wrap it up with plastic wrap and freeze this. Thaw it overnight in the refrigerator before serving.

No-Bake Lemon Cheesecake
INGREDIENTS
Graham Cracker Crust
- 1 sheet Graham Crackers made to crumbs
- 1 teaspoon Vanilla Extract
- 1 stick unsalted butter melted
Lemon Cheesecake filling
- 2 big Lemons juiced
- 4 oz Cream Cheese
- 1 cup Heavy Cream ½
- ½ cup Sweetened Condensed Milk
Lemon Cheesecake frosting
- 2 tablespoon Sour Cream
- ½ cup Heavy Cream
- Lemon Rinds, Mint Leaves & Almond Slivers for garnish (optional)
INSTRUCTIONS
- In a bowl, combine Graham Cracker Crumbs with Vanilla Extract and Melted Butter. Toss until combined. Layer it at the bottom of serving glass jugs.
- Whip chilled Heavy cream until creamy with stiff peaks. Keep it aside
- Beat Cream Cheese with Lemon Juice and Sweetened Condensed Milk until smooth and creamy. Add 2 tablespoon of the whipped heavy cream and beat again until combined. Take it all up in a Piping Bag with your favorite Nozzle
- For the frosting, add some Sour Cream to your already whipped Cream. Beat just until combined. Take it up in a piping bag with your favorite nozzle.
- Pour the cheesecake filling over the Graham Cracker layer. Top with the Whipped cream and Sour Cream frosting.
- Garnish the Lemon Cheesecake with some Almond Slivers, Mint Leaves, and Lemon rinds. Refrigerate until served!
