Let's talk about the flavors
These have a zesty and refreshing frosting of whipped cream and Key lime which is the perfect balance of sweet and sour flavors. Also, the Cupcakes are so good It's just like my moist Vanilla Cupcakes with the perfect crunch of Coconuts in every bite! The best part is the nutty flavors of the toasted Coconuts on top along with the wedge of Key Lime! It just adds to the goodness of this tropical favorite dessert!
I just love Key Lime! Doesn't it just screams summers! Also Coconut and Key Lime is the best summer flavor combination of all. It's not too sweet like any winter dessert but has the perfect tanginess which you expect from any Key Lime Dessert. I just hate it when people make Lemon or Key Lime desserts and then they fill it with so much sweetness. I think if it's tangy, it's just perfect!

The Inspiration
Last morning while sipping my afternoon Lemon Iced Tea and enjoying my Lemon Coconut Cake, I thought about baking something which could mirror the beautiful sunny days outside! Honestly, nature is my biggest source of inspiration, and just like in the summers it's bright and sunny with the bright green leaves painting your horizon, I thought why not mirror it in my recipe. Something which feels like a tropical drink but is also like your favorite dessert which you'll want to enjoy with your favorite people only!
The Coconut Cupcakes
These are just like your good old Vanilla Cupcakes! Moist, soft, and fluffy. It's not at all dry and has the perfect crunch of Coconuts with every bite. You'll just love the flavor combination.
Eggless Coconut Cupcakes
So the only trick to bake Eggless cupcakes is to replace Eggs with Yogurt. If you do not have Yogurt at home, you can replace it with buttermilk. Also, you can actually make Buttercream at home. Just combine a Half cup of Milk with 1 Tablespoon of White Vinegar to make Buttermilk at home.
To make my Cupcakes I have mixed Flour along with Melted Butter, Vegetable Oil, Baking powder, Granulated Sugar, Yogurt, Desiccated Coconuts, and Milk.
It's very important to use Vegetable Oil in your Cupcakes, be it whichever flavor you're making. It accounts for moist cupcakes.
Also, I have used packaged desiccated Coconuts. However, you can grate your own coconut at home.
If you can add some Coconut milk in place of whole milk, it'll make this even tastier.
Also, to make Gluten-Free Vegan Key Lime Coconut Cupcakes, use Gluten-Free Coconut Flour, replace the butter with vegetable oil, the Yogurt with Thick Soy Yogurt and Whole milk with Coconut Milk.
It's very essential that your Cupcake batter is lumpy. So don't overbeat your batter. I'd say it's better to use a spatula to mix everything than a stand or handheld mixer.
The Whipped Cream Key Lime Frosting
The deliciously tropical Whipped Cream and Coconut Key Lime Frosting is the best part about these Cupcakes.
I have combined Heavy Whipping Cream with Key Lime Zest, Key Lime Juice, and some Green and White Gel Food Color. Gel food color is so good. Only a drop of this gives you bright edible colors. Also, I have used a drop of white gel food color just to mild the green color and make it look a little more edible. The trick to using food colors is to never overuse it. If you cannot find Gel food color, then just use regular food color, but be sure to use some white food color as well.
The frosting is totally drool-worthy! It's sweet and sour and had the perfect fragrance of Lime!
The best part about it the toasted Coconuts on top. Just your regular desiccated Coconuts which are toasted over a high flame in a Pan. It just takes 1 minute to toast your Coconuts and it looks and tastes so yum!

INGREDIENTS
Coconut Cupcake
- 1 Cup All Purpose Flour
- 1 tablespoon Baking Powder
- ¼ Cup Melted Butter
- ¼ Cup Granulated Sugar
- 1 tablespoon Vegetable Oil
- ½ tablespoon Yogurt
- ½ Cup Desiccated Coconuts
- ½ Cup Milk
Key Lime Whipped Cream
- ½ Cup Whipping Cream
- 1 tablespoon Key Lime Zest
- 1 teaspoon Key Lime Juice
- 1 drop Green Gel Food Color optional
- 1 drop White Gel Food Color optional
- ¼ Cup Granulated Sugar
- 2 tablespoon Desiccated Coconuts Toasted
INSTRUCTIONS
- Pre heat the oven to 400F or 220C and line a Muffin tin with Cupcake Liners.
Coconut Cupcakes
- Take Flour along with Baking Powder, Melted Butter, Granulated Sugar, Desiccated Coconuts, Vegetable Oil, Yogurt and Milk. Make a lumpy batter. Use an Ice cream scoop to scoop out one portion of the batter and place it in the muffin tin lined with cupcake liners. Use an Ice-cream scoop or a spoon to ensure that you pour the same quantity of batter.
- Bake the cupcakes at 400F or 220C for 10-Minutes.
- In a medium-sized bowl whisk whipping cream, key lime zest, key lime juice, granulated sugar, green gel food color, and white gel food color until you see stiff peaks.
- Once the cupcakes are done, allow them to cool down. Once they have cooled down, use a nozzle of your choice and a piping bag to pie the key lime frosting on your cupcake. Sprinkle some toasted desiccated coconut on the cupcakes for that extra crunch along with a wedge of Key Lime for decoration. ENJOY!
