- Peel the Bananas and cut each piece in half right across the middle. Next, slice every half lengthwise down the center to create neat quarters, then set them aside.

- Melt the butter in a wide skillet over medium heat then stir in the brown sugar and a pinch of cinnamon until the mixture is smooth and bubbling.

- Carefully add the Banana slices to the pan in a single layer and cook them gently for a few minutes until they begin to soften and become golden brown.

- Pour the dark rum into the pan and let the sauce simmer steadily until the liquid reduces slightly and the alcohol has cooked off completely.

- 4 large Bananas ripe but firm
- ¼ cup dark rum
- Butter pecan ice cream for serving

- Pour the dark rum into the pan and let the sauce simmer gently to cook off the alcohol safely without any open flames. If you prefer a dramatic presentation with flames, take the skillet off the burner before adding the rum, carefully ignite it with a long lighter, place the pan back over the heat, and swirl it gently until the fire dies out and the sauce thickens.

Notes
- Choose bananas that are ripe so they are sweet, but make sure they are still firm so they hold their shape during the sautéing process. DONOT USE OVER RIPE BANANAS
