Mini Banana Cheesecakes are made with fresh bananas. This is rich, creamy, moist, and super delicious Cheesecake. These Mini Banana Cheesecakes get ready very quickly and are the perfect summer desserts.

These are topped with a whipped cream frosting with just a hint of Cinnamon dusted over it and a fresh slice of Banana. Biting into these Mini Banana Cheesecakes feels like biting into a world of Banana heaven.

Hey friends. So, you know me and my obsession with Banana recipes continue the entire summer long. I just love to bake with Bananas. The flavors in any Banan dessert are to die for. These Mini Banana Cheesecakes are my favorite recipe for Summers. It combines brilliant flavors of Ripe Banana with Creamy Cheesecake flavors. Also, the Graham Cracker crumbs are the perfect companion to this Mini Cheesecake. These Mini Banana Cheesecakes tastes exactly like The Cheesecake Factory's Banana Cream Cheesecake. In fact, these make for a perfect dessert recipe for the Crowd and is always a favorite with the Kids

I love to bake these Mini Banana Cheesecakes for my Summer Potlucks and also during the Weekend. We end up grabbing more than we can imagine and it's always so much fun.

The only thing this recipe misses is the Nilla Wafers crumbs. I know, I should have used it but there was no way to find it anywhere now and I had to stick to the classic Graham Cracker Crumbs. I so missed it! If you want, you should definitely swap Graham Cracker Crumbs with Nilla Wafer Crumbs. Then it'll taste just like good old Banana Cream Pudding.

The Cheesecake filling is undoubtedly the best thing about this recipe. It feels like biting into a Banana Cream Heaven. Yes! That's true. The intense Banana flavor because of ripe bananas and the creamy taste of Cheesecake with the perfect tartness because of the Sour Cream, carefully balances out all the flavors.

However, the best thing about these Mini Banana Cheesecakes is the topping. I cannot tell you how much I love the combination of Cinnamon with Banana. And that hint of Cinnamon over the Whipped Cream with that slice of fresh Banana is a total game-changer. It creates a burst of Banana Flavor in your mouth which you won't forget so easily. It will force you to grab another one. Have you tried these Banana Cinnamon Rolls?

Ingredients needed to make Mini Banana Cheesecakes

For the Crust

  • 1½ cup Graham Cracker Crumbs
  • 1 stick Melted Unsalted Butter

Cheesecake Filling

  • 4 oz Cream Cheese kept at room temperature
  • 1 large Egg kept at room temperature
  • 1 tablespoon Sour Cream
  • 2 ripe Bananas Mashed
  • 1 teaspoon Pure Vanilla Extract
  • 1 cup Granulated Sugar

Topping

  • whipped cream
  • ground cinnamon
  • banana slices

How to make Mini Banana Cheesecakes

Making the Crust

  • So to begin making these Mini Banana Cheesecakes, first make the crust
  • Combine Graham Cracker Crumbs and melted butter in a bowl

  • The mixture should resemble a wet sand-like texture

  • Line a Muffin tin with liners
  • Place the crumb mixture in the muffin tin.

  • Press it down firmly with the back of a spoon
  • Bake the crust at 350F or 180C for 5 minutes.

Making the Banana Cheesecake filling

  • Now, coming to the next important part which is the filling
  • Begin by combining Cream Cheese, Sour Cream, Mashed Ripe Bananas, Granulated Sugar and Vanilla Extract

  • Beat at low speed for 1-2 minutes until evenly combined
  • Next, add the Egg

  • Beat just for 30-seconds or until the Egg just combines. (DO NOT OVERBEAT AFTER ADDING THE EGG)

Bake the Mini Banana Cheesecakes

  • Now, finally, pour this filling in the pre-baked crust

  • Fill all the way up to the tip of the liner
  • Bake these Mini Banana Cheesecakes at 350F or 180C for 15-17 minutes
  • After these Mini Banana Cheesecakes gets baked, allow them to cool down to room temperature for 30 minutes
  • Now, freeze these Mini Banana Cheesecakes for 4 hours or overnight

Topping

  • Finally beat some heavy whipping cream to make the frosting
  • Take it up in a piping bag with your favorite nozzle
  • Do the frosting over the Mini Cheesecakes
  • Dust some Ground Cinnamon on the top
  • Push in a thin slice of Banana on the side of the frosting and serve!

Tips to bake the perfect Mini Banana Cheesecake

  • Always use Room temperature ingredients like Eggs and Cream Cheese
  • Go for block Cream Cheese like Philadelphia Cream Cheese for best results
  • Allow the Mini Cheesecakes to cool down and freeze. I know waiting for 4 hours is difficult but trust me the wait is worth it.
  • Do not overbeat after adding the Eggs. This will cause aeration in your Cheesecake filling and the cheesecake will cave after being baked.

INGREDIENTS

For the Crust

  • 1½ cup Graham Cracker Crumbs
  • 1 stick Melted Unsalted Butter

INSTRUCTIONS

  • To make the Crust take a medium-sized mixing bowl. Combine Graham Cracker Crumbs with melted butter until you have a wet sand-like mixture. Line a Muffin tin with Liners. Place the crumbs in the muffin tin. Press down firmly so that the crust takes a proper shape. Bake it at 350F or 180C for 5 minutes.
    After the Crust gets baked, allow it to cool down for 5 minutes.
  • To make the Banana Cheesecake Filling, combine Cream Cheese with Granulated Sugar, Mashed Ripe Bananas, Vanilla Extract, and Sour Cream. Beat at low speed for 1-2 minutes or until combined.
  • Now, add the egg and whisk for just 30-seconds. Do not overbeat after adding the Egg. Beat just until combined.
  • Place this filling over the pre-baked crust. Fill it all the way up to the top of the liner. Bake these Mini Banana Cheesecakes at 350F or 180C for 15-17 minutes.
    After the Mini Banana Cheesecakes get baked, allow them to cool down to room temperature for 30 minutes. Then freeze it for 4 hours.
  • After these Mini Cheesecakes freezes up to perfection, get them out. Whip Heavy Cream and take it up in a piping bag with your favorite nozzle. Decorate the Mini Cheesecake with some frosting. Dust some Ground Cinnamon on top. Push in a thin slice of Banana on the side of the frosting and serve these babies.
