Comforting Southern Lemon Cobbler is an easy and quick summer dessert recipe which you can make so easily. This Old Fashioned Lemon Cobbler is citrusy, delicious and so yummy!
Preheat the oven to 350F or 180C and grease a cobbler baking dish or 9x9" baking dish with butter.
Mix the wet ingredients - In a mixing bowl beat Cream Cheese with granulated sugar, brown sugar, vanilla extract, and lemon extract.
To this stir in the dry ingredients - flour, baking powder, salt, ginger, cardamom, buttermilk, lemon juice. Do not over mix the batter
Pour this to the prepared baking dish. Spoon the lemon pie filling on top.
In another bowl combine rolled oats with cold cubed butter and spread this mixture over the lemon pie filling evenly.
Bake @350F for 20-25 min until the top gets perfectly golden brown and the lemon pie filling is oozing out from the cracks and edges.
Let it cool completely, dust confectioner's sugar on top and serve.
Serve with a dollop of Whipped Cream or Ice Cream. You can garnish with some freshly grated Lemon Zest, a drizzle of honey and a sprig of fresh Mint on top.
