From garden fresh basil to juicy and fresh cherry tomatoes, to the freshest Mozzarella cheese is what I crave all summer long.

Cheese stuffed Chicken Breasts

Chicken stuffed with Mozzarella and topped with tangy feta tastes just outrageously delicious. I love how the cheese melts along with the chicken making it extra juicy and flavorful.

Ingredients needed to make Tomato Basil Stuffed Chicken Breasts recipe

This Tomato Basil and Cheese Stuffed Chicken Breast is a pretty simple recipe needing only basic and fresh pantry staple ingredients.

  • 1 pound Chicken Breast
  • salt and pepper
  • ¼ cup Feta Cheese crumbled
  • ¼ cup Sundried Tomatoes
  • 1 cup Shredded Mozzarella Cheese low fat
  • 2 cloves garlic minced
  • 1 teaspoon Olive Oil
  • 2 tablespoon Balsamic Vinegar
  • ¼ teaspoon Red Pepper Flakes
  • ½ teaspoon Toasted Onion Flakes
  • ½ teaspoon Garlic Powder
  • ¼ cup Fresh Basil chopped
  • 1 cup Cherry Tomatoes

How to make Cheese Stuffed Chicken Breasts with Tomato and Basil

Fill the Chicken Breasts with Cheese and fold it

  • Cut open the Chicken breasts into butterflies and season with salt and pepper
  • Stuff the Chicken Breasts with Mozzarella Cheese, Sundried Tomatoes and fold it in carefully tucking in all the filling.

Season the Chicken Breasts

  • Top the Chicken top with oil from the jar of Sundried tomato.

Make Balsamic Roasted Tomato Sauce

  • Heat olive oil in a skillet. As the oil shimmers, add the minced garlic and cherry tomatoes. Lightly season with toasted onion flakes, garlic powder and red pepper flakes.
  • De glaze the pan with Balsamic vinegar. Transfer this to the chicken.
  • Top the Chicken with Mozzarella Cheese.

Bake the Chicken for 15 min

  • Bake @200C or 400F for 15 min.

Serve with the Tomato Basil sauce on top

  • Once the chicken gets baked, top with freshly crumbled Feta and chopped Basil. Serve

Substitutions

  • Cheese - instead of Mozzarella Cheese you can use Feta Cheese to stuff the chicken
  • Fresh Tomatoes - instead of cherry tomatoes you can use chopped Heirloom tomatoes.
  • Vegetarian - the beef hamburger can be replaced with a plant-based burger to make this vegetarian

Storage

Store leftover Chicken Stuffed with Mozzarella, Tomato and Basil in an airtight container in the refrigerator.

You can store leftover Stuffed Chicken in the freezer for up to 3 months. Thaw overnight in the refrigerator and reheat in the oven before serving.
