Perfectly cooked, juicy and soft Corn on the Cob with Cheddar Cheese and Ranch dressing on top, this one is one of my favorites. Better than your usual Corn on the Cobb, this one is soo special. It's just the best way to enjoy Corn on the Cob.

I cannot imagine July without some yummy Corn on the Cob. It's just the best time of the year. Summers are incomplete without some delicious Corn on the Cobb.

Ingredients
- Corn on the Cob (Shucked)
- Cheddar Cheese
- Ranch Dressing
- Softened Butter
- Chopped Cilantro
- Red Pepper Flakes
- Lime Juice

Instructions
Step 1: Cook Corn in Instant Pot
- Pour water in the instant pot. Place the trivet in it
- Place the Corn on the Cob over it
- Cover with a lid
- Pressure cook on high for 5 minutes
- After it gets cooked, allow the pressure to release naturally.

STEP 2: Add Cheese

- Brush the Corn with softened butter.
- Add Cheddar Cheese over the Corns

- Cover with the lid for 3-4 minutes so that the cheese melts
STEP 3: Garnish and Serve
- Garnish with Ranch dressing, chopped Cilantro and Red Pepper Flakes
- Serve immediately.
Remember that the cooking time of the corn on the cobb will depend on the freshness of the corn. If you have farm-fresh corn on the cobb it will cook perfectly within 4-5 minutes in the instant pot. If you have Corn on the Cobb which is a couple of days old, then you need to cook it longer as it might have dried.
Hint: Do not forget to brush the Corn on the Cobb with Butter.
A healthy Corn on the Cobb Recipe
We love to munch on fresh Corn on the Cobb, but from time to time, just for a change of taste, I like to spice things up. Adding Cheddar Cheese and Ranch dressing over the Corn feels soooo good. It gives a cheesy and creamy taste to the sweet corn and that's just so amazing. You can also add some crispy fried Bacon on top.
Cooking Variations

- You can make air fryer corn on the cob. Just grease the corn and place in the air fryer basket @400F for 15-16 minutes.
- You can cook these in the oven. Place greased Corn on the Cob in a sheet pan and bake @400F for 10 minutes. After 10-min, turn and bake for another 10-minutes.

Ranch Cheddar Corn on the Cob in Instant Pot
INGREDIENTS
- 2 Ears Corn on the Cob shucked and cleaned
- ¼ cup Cheddar Cheese shredded
- 2 tablespoon Ranch Dressing
- 1 stick Unsalted Butter softened to room temp.
- freshly chopped Cilantro
- Lime Juice
- Salt and Pepper
- Red Pepper Flakes
INSTRUCTIONS
- Pour water into the instant pot. Place the Trivet in it. Place the Corn on the Cob over it. Pressure cook on high for 5 minutes. After it gets cooked, allow the pressure to release naturally.
- Now, brush softened butter over the Corn on the Cob and sprinkle Cheddar Cheese over the Corn on the Cob. Cover with the lid and allow the cheese to melt.
- After the cheese has melted over the Corn, garnish with salt and pepper as per taste, creamy Ranch dressing, chopped Cilantro, Lime Juice, and Red Pepper Flakes
