Today morning I was craving some Authentic TGI Fridays Pasta with loads of Garlic, Tomatoes, Basil, and Parmesan. And guess what I made! What is Bruschetta Chicken?

Bruschetta Chicken is basically Chicken breasts or thigh pieces topped with Bruschetta. This is so much healthier and so delicious. It's bursting with authentic Bruschetta flavors in every bite!
Making Bruschetta
Bruschetta involves combing a few staple ingredients which are - Chopped Roma Tomatoes, Red Onions, Garlic, Olive Oil, Basil, Red Pepper Flakes, Salt & Pepper.

Here I have made the Bruschetta in the beginning and then I have topped it over my Pasta

How to make Bruschetta Chicken Pasta in Instant Pot?
- Make Bruschetta by combining all the ingredients. Keep it aside.
- Pour Chicken Broth in the Instant Pot
- Add the seasoning - Italian Seasoning, Salt & Pepper
- Add the diced Chicken pieces & uncooked Pasta
- Add the Bruschetta on top. Drizzle some Olive Oil on top. Do not stir.
- Cover with lid
- Pressure cook on high for 3 minutes. (Allow the pressure to release naturally)
- Garnish with freshly grated Parmesan and Basil.

Bruschetta Chicken Pasta in Slow Cooker
- Make the Bruschetta Topping and keep it aside
- Pour Chicken Broth in the Slow Cooker
- Add the seasonings - Salt, Pepper, and Italian Seasoning. Stir to combine
- Add the chicken pieces
- Top with the Bruschetta
- Add some more Extra virgin olive oil on top.
- Cover with glass lid
- Slow cook on low for 5-6 hours or on high for 4 hours.
- Stir in the Cooked Pasta and Grated Parmesan Cheese
- Serve with more Parmesan and chopped basil on top.
Can you freeze Bruschetta Chicken Pasta?

Yes, you can. Make the Pasta. Cool it down completely. Transfer to an air-tight container with a lid. Top with some more Olive Oil and cover the lid tightly. Freeze for 2 months. Thaw overnight in the refrigerator and reheat in the oven before serving.

Bruschetta Chicken Pasta (Instant Pot / Slow Cooker)
INGREDIENTS
Bruschetta
- 2 medium sized Roma Tomatoes finely chopped
- 1 medium sized Red Onion finely chopped
- 4-5 cloves Garlic minced
- 1 teaspoon Kosher Salt
- 1 teaspoon Cracked Black Pepper 2 rinds
- 2 tablespoon Extra Virgin Olive Oil
- 1 tablespoon Dried Basil
- 1 teaspoon Red Pepper Flakes
Pasta
- 1 lbs Chicken Breast Boneless, Skinless, Chopped into 1-inch cubes
- 1 teaspoon Italian Seasoning
- 1 teaspoon Kosher Salt & Pepper
- 2 cups Chicken Broth low sodium
- 8 oz Fusili Pasta uncooked
- 1 tablespoon Extra Virgin Olive Oil
Garnish
- Grated Parmesan Cheese
- Freshly chopped Basil
- Balsamic Vinegar to drizzle on top
INSTRUCTIONS
- Combine all the ingredients to make Bruschetta in a bowl. Stir until combined. Keep it aside.
- Pour Chicken Broth in the Instant Pot. Season with Italian Seasoning, Kosher Salt and Cracked Pepper. Stir until combined.
- Add the diced Chicken Pieces and uncooked Pasta.
- Add the Bruschetta on top. Do not stir to combine.
- Pressure Cook on high for 3 minutes. Allow the pressure to release naturally.
- Stir in freshly grated Parmesan Cheese. Serve with some more Parmesan and chopped Basil on top. Enjoy!
