Banana Nut Blondies topped with Chocolate Frosting is an easy and delicious dessert recipe perfect for the summers.

It has a sweet Banana and Butter Base along with bites of Almonds and is topped with a Dark Chocolate Layer which just adds to the goodness of this delicious dessert.

Hey Guys! Happy Weekend. So just like every weekend, I am back with another easy yet exciting baking project for the weekend. Today morning when I woke up, I saw 2 Bananas in my fridge, and from that moment, I was running ideas in my mind as to what would be a great dessert with Bananas.

Banana Nut Blondies with Chocolate Frosting

You know how much I love Bananas and I've made almost every possible recipe with Banana - be it my Banana Cinnamon Roll which people love to make and are also one of the most popular recipes of Recipe Magik to Chocolate Banana Bread, and the ever-special Banana Brownies!

Today, I thought let's do an easy and tested dessert recipe with these Bananas  - Banana Blondies. It's surely an oldie but it always a goldie! I just love Blondies! It's the perfect summer dessert. Small, bite-sized, and filled with summery goodness. Top that with a layer of Dark Chocolate and it's oh soo good! You'll be reminded of my Chocolate Banana Cupcakes which are surely a treat.

These Eggfree Banana Blondies are not only delicious but are so sweet and delectable that you'd really want to save some and have it later. These tastes especially good with some iced tea or lemonade. I like to serve these kinds of easy and bite-sized desserts especially on beach days or lake days to my kids! My kids love these Banana Blondies so much that I almost never have leftovers 🙂 But, that's the fun right! You make something and within minutes it's over!

What is Blondie?

Blondies are small bite-sized sweet desserts that are traditionally made with Eggs, Oats, Brown Sugar, and mixed with a flavor of your choice. Also, these are frosted on top, unlike brownies. Oats are added to Blondies to make it a little chewy, unlike a cake that is super fluffy and spongy!

However, today I'll share with y'all an Eggless Blonde recipe. Also, this is made with granulated sugar. The main reason to use granulated sugar was when it's done you could see two different layers. One of the Banana and the other of the chocolate.

Eggless Banana Blondie with Buttermilk

This Banana Blondie is made without Eggs. Traditionally Blondies are made with Eggs but this time, I tried an eggless version and it tasted just the same, equally fluffy, soft, and moist. Also, I have added some Yogurt and Buttermilk to make these Banana Blondies.

Buttermilk and Yogurt is the perfect replacement for Eggs in a Blondie. Also, this Blondie is made with Granulated Sugar. Buttermilk is really important as it accounts for the softness in these Blondies and makes them spongy. So, if you do not have Buttermilk at home, you can either use a whole egg or some Sour cream or just mix half cup milk with vinegar or lemon juice to make your homemade Buttermilk. Easy right!

Also, isn't Banana and Almond the best combo ever. I just love Almond with Bananas. It gives the perfect taste and nutty bite to your Blondies.

I love to experiment with Banana flavors and over the years I've realized that there is nothing as good as the combination of Banana and Chocolate. Sure, Banana and Peanut butter are also great and Banana and Coconut are also a perfect tropical flavor combination and this recipe tastes amazing with those flavors as well.

How to make Banana Blondies?

Banana Blondies is such an easy and delicious recipe. You combine the basic Wet Ingredients - Butter, Yogurt, and Mashed Bananas with Dry Ingredients - rolled Oats, crushed Almonds, granulated Sugar and Flour. Add the Buttermilk and combine everything until a lumpy Blondie batter is ready. Pour this in a lined 9 by 9 baking tray and bake your Blondies for 17 - 20 minutes at 350F or 190C.

Meanwhile, you can make the Chocolate Frosting. For the Chocolate Frosting, I have melted about 8oz or 100gm of Dark Chocolate with Butter and once it's melted and is glazy, you just need to cool it down and pour over your cooled Banana Blondie.

Now, just freeze this Banana Blondie, and once it's frozen cut it out into small squares. And that's done.

Other variations to this recipe

So, as I said, Banana Blondies are really a very versatile recipe and there are so many variations which you can do in this recipe.

  • You can add 1 Egg and replace Yogurt and Buttermilk.
  • You can do the frosting with Peanut Butter.
  • Also, you can do the frosting with Cream Cheese.

INGREDIENTS

Wet Ingredients

  • 2 qts Bananas
  • ¼ Cup Melted Butter
  • ¼ Cup Yogurt
  • 1 Cup all-purpose flour
  • ½ Cup Rolled Oats
  • ¼ Cup Granulated Sugar
  • ½ teaspoon Baking Soda
  • ½ teaspoon Baking Powder
  • ½ teaspoon Ground Cinnamon
  • ½ teaspoon Ground Nutmeg
  • 1 tablespoon Pure Vanilla Essence
  • ½ Cup Buttermilk
  • ¼ Cup Almonds chopped

Chocolate Frosting

  • 8 oz Dark Chocolate
  • 1 stick Salted Butter

INSTRUCTIONS

Making the Blondie Batter

  • In a mixing bowl combine The Bananas with Melted Butter and Yogurt. Use a fork to mash the Bananas and combine everything well.
  • Add the Flour, Oats, Granulated Sugar, Baking Soda, Baking Powder, Ground Cinnamon, Ground Nutmeg and Vanilla Extract and mix well. Also, add in the Buttermilk and combine everything well using a rubber spatula until you have a lumpy batter ready. Do not overbeat.
  • Pour the Blondie Batter in a 9 by 9-inch lined baking tray and Bake the Blondie for 17-20 minutes or until a skewer inserted in the center comes out clean.
    Once the Blondies get baked, cool them down to room temperature.

Making the Chocolate Sauce

  • Melt the Dark Chocolate with some Butter in the oven or in the pan over low heat. Keep stirring constantly to avoid burning the chocolate. Cool the Chocolate frosting and spread over your Blondies.
  • Put the Blondies in the freezer covered for about 30 minutes to 1 hour and then cut it out and enjoy!
