So, you can enjoy these as much as you want. It's the perfect replacement for Potatoes.

However, skeptical I was in the beginning, these Zucchini Tater tots literally washed off all my worries. They are so good and you do not even miss the potatoes.
How to make Low Carb Zucchini Carrots Tater Tots
These Zucchini Carrot Tater Tots are so low in carbs and make for a healthy and yummy snack recipe, especially for the hot summer months when all you want is some quick snacks with some cold coffee.
So, To make these, I begin by grating my Zucchini. You should use the bigger side of your grater. Also, grate a carrot and the Cheddar cheese and keep aside.
Take up the Zucchini in a paper towel and soak out the excess water. This step is very important. This will make sure that your Tater Tots are crispy and have a firm shape.
Next, combine these shredded Zucchini with carrots, cheddar cheese, some chopped green chilies, some corn starch, Panko Bread Crumbs, and Cream Cheese. Season it with salt and pepper.
Take one tablespoon of this mix into your palms and shape it into an oval.
Bake your Tater tots for 20 minutes each side at 400F or 200C. Bake both sides for a really crispy Zucchini Tater Tots.

- 1 cup Cheddar Cheese grated
- 2 tablespoon Cream Cheese
- ¼ Cup Panko Breadcrumbs
