Also, this is made without Flour, so that makes it all the less in carbs and of course it's gluten-free as well. When you're looking for a quick breakfast or lunch recipe, these cute little Zucchini fritters are your best options.

It's low in carbs and makes for healthy food which is also tasty!

Low Carb Keto Zucchini Fritters without Flour

Whenever I am looking to make something that is low in carbs, Zucchini is my go-to veggie. Not only is it healthy, but is low in carbs and makes for a perfect green vegetable that you can have at any time of the day.

Fritters are the best recipes with Zucchini or any veggies. Have you tried my Corn Fritters and my Carrot Potato Fritters. These are low in oil, they are barely shallow fried in Olive oil and that's all about the carbs that you'd be using in your recipe. Nothing else!

Zucchini is my favorite summer squash. Although my kids aren't really a fan of it, it's was great when you can sneak in some healthy food that is also tasty and they won't reject it right away!

If you're on a Low Carb diet or a Keto Diet, Zucchini is one veggie that you must have a lot of. It's low in carbs and filled with other health benefits which help you stay strong and fit.

🥘 Ingredients

  • 1½ pound Zucchini grated
  • ½ Cup Sharp White Cheddar Cheese grated
  • ¼ Cup Parmesan Cheese grated
  • 1 whole Egg
  • 2 Tbsp Cream Cheese
  • 6-7 cloves Garlic grated
  • 1 Tbsp Black Pepper grounded
  • 1 Tsp Kosher Salt
  • 2 Tbsp Olive Oil

👩‍🍳 How to make No Flour Zucchini Fritters

Generally, Zucchini fritters are made with flour. This is because Zucchini releases a lot of water when you combine it with salt. So the flour acts as a soaking agent and also as a binding agent.

However, today, I'll teach you how to make Flourless Zucchini Fritters. Making these healthy No Flour Zucchini fritters is so easy.

First, you grate your Zucchini. You can use a box grater or any grater you have to grate these.

Next, mix it with some salt and leave for 10 minutes. The salt with help releases the water of your Zucchini making it extra firm and crisp.

Take it all up in Parchment Paper or a clean kitchen towel and squeeze out the excess water. What you'll be left with would be a big ball of grated Zucchini.

This step will make sure that no extra water is released while you mix the grated Zucchini with the rest of the ingredients. Also, it'll account for crisp fritters.

Mix that with some Sharp White Cheddar Cheese, some Grated Parmesan Cheese, Cream Cheese, crushed Garlic, one whole Egg, and some Freshly grounded Black Pepper.

Mix everything until you have a dry and lumpy mix ready.

Heat some Olive oil in a Pan or a skillet and once the oil is smoking hot, reduce the flame to a simmer and use a ladle to pour the mix into the hot Pan.

Don't worry about the shape, it'll soon flat out and then you can shape it as you wish to.

While it's frying on one side, grease the other side with some hot oil from the side of the pan.

This will help the other side to firm up quickly and when you flip your fritters, it won't stick to your spoon or be all lumpy and gooey.

Once it starts to get brownish from the sides, flip your fritter. Be careful with hot oil.

Flip it and fry both sides until it turns golden brown from both sides.

And it's done! It's so easy to make and is so tasty! Also, no one will believe that this is a Low Carb recipe.

After all, everyone thinks that if it's healthy it has to be bland! Well, not anymore, These Zucchini Fritters are not only scrumptious but also score full points when it comes to it being a Healthy recipe. 🤤🤤

Carefully take out your Zucchini Fritters on a Plate. Serve it with some Cream Cheese or Sour Cream and a sauce of your choice. I have used some Tomato Ketchup for decoration.

🍳 Air Fryer Flourless Zucchini Fritters

  • Place the uncooked Fritters in a greased Air fryer basket
  • Keep space between each fritters for air circulation.
  • Cook at 400F for 15 minutes.

INGREDIENTS

  • 1½ pound Zucchini grated
  • ½ Cup Sharp White Cheddar Cheese grated

INSTRUCTIONS

  • Grate the Zucchini and take it all up in a colander. Mix with some salt and keep aside for 10 minutes.
    After 10 minutes, take it all up in a Parchment Paper or Clean Kitchen Towel and squeeze out the excess water.
  • Add the Grated White Cheddar Cheese, Grated Parmesan Cheese, and Cream Cheese to it.
    Also, throw in the crushed Garlic along with some freshly grounded Black Pepper. Mix everything well until combined.
  • Heat Olive Oil in a Pan or skillet and once the oil is smoking hot, reduce the flame to simmer and use a ladle to pour the fritter batter into the hot oil.
    Once it starts to get brown from the sides, flip it carefully, and fry both sides until it turns golden brown from both sides.
  • Serve your Flourless Zucchini Fritters with some Cream Cheese and a sauce of your choice.

Notes

  • Drain out excess water from your Zucchini by squeezing it out. If you do not drain the water out, your Fritters will turn out to be soggy and you will not be able to fry them. 
  • You can add some Italian Seasoning to your fritters as well.
