The 4th of July is honestly my favourite day of the entire summer. There is something about combining a backyard pool, the smell of a grill firing up, and a table loaded with red white and blue food that just feels like the best version of summer.

Every year I spend a good chunk of time thinking about what to cook and what to skip, because nobody wants to be sweating over a stove when everyone else is splashing around outside.

Over the years I have figured out that the best pool party food is the kind that works for everyone. Kids grabbing something quick before jumping back in, adults grazing between drinks, and guests who just want to sit in the sun and eat something genuinely good.

That balance between easy recipes and actually impressive food is harder to get right than it sounds, and it took me a few messy, overly ambitious July 4th cookouts to learn that lesson.

What I have landed on is a mix of classic American cookout staples, some fun patriotic desserts, and a few refreshing bites that hold up well in the heat.

I arrange baked vanilla cupcakes tightly in a rectangle, then spread red, white, and blue buttercream across the tops to create a seamless flag design. Red White and Blue Jello shots - These layered gelatin shots are a staple at every adult pool party I throw. I build three distinct layers starting with cherry Jell O on the bottom, then a sweetened condensed milk and unflavoured gelatin middle, and finally a blue raspberry layer on top. These are always the most photographed thing on my dessert table.
