Oreo Ice Cream Sandwiches
Oreos are one of my go-to ingredients when I am making any treats for my kids. These are so useful in baking. Today, I had to bake something for the kids as my son had some friends over for a small party at home. So, after a lot of browsing, I zeroed down on this recipe. This was the easiest of all and this was devoid of Cream Cheese or Heavy Whipping Cream. I thought, of making these Ice Cream Sandwiches with 3 flavors of Ice Cream, which were - Vanilla, Chocolate, and Mango. Luckily, I had all three flavors at home so making these were a breeze. The only boring part was waiting for the Ice Cream sandwiches to freeze so that I can coat them with the Chocolate Chips.
The weather here is so Summery! I just cannot think of a Summer treat that's not Ice Cream. Not only kids, ice cream is actually one of my personal summer favorites. I love to pack these Oreo Ice Cream Sandwiches for beach days as well. These Oreo Ice Cream Sandwiches do not melt easily. I pack them in my cooler and they stay fresh and cute!
To bring in the Summer flavors in my Ice Cream sandwich, I use Summer flavored Ice creams such as Pineapple or Mango or Blueberry or Raspberry. They taste so great!
How to make Oreo Ice Cream Sandwich
So you start by choosing your Oreos. You can use any flavor or kind of Oreos. I have used Chocolate Oreos. These taste great with Mint Oreos and Golden Oreos as well.
Now, the most important part! You should use one whole Oreo Cookie. If you try to open the cookie and use it, chances are your Ice Cream sandwich will not be great. I have seen from my experience that if I am using just one cookie for the base, it melts and becomes all soggy and breaks. While if you use a whole cookie, this won't happen.
Next, add a spoonful of the Ice Cream on your Oreo and top with another piece of Oreo. Freeze this Oreo Ice Cream Sandwich for about 2 hours.
After 2 hours, get it out and coat it with Chocolate Chips or Sprinklers of your Choice. And then freeze it again for at least 10 minutes before you serve these. You need to serve these chilled or else if the Ice Cream starts to melt, it will get all messy!
How to make skinny Oreo Ice Cream Sandwich
Oreo Ice Cream Sandwiches are filled with calories. So, to make a skinny version go for low-fat and non-dairy ice creams. These are the best alternative to regular Ice Creams and shall reduce the carbs and calorie count in your Oreo Ice Cream Sandwich considerably.
Should you use Store-bought Ice Cream or Homemade Ice Creams?
I would recommend that you use the Store-Bought Ice Creams. The only reason being that they do not melt easily because they are high in fat and have more air than homemade Ice Cream.

Summer Oreo Ice Cream Sandwich
INGREDIENTS
- 1 Pack Oreos
- 1 Cup Vanilla Ice Cream, Mango Ice Cream, and Chocolate Ice Cream
- ¼ Cup Chocolate Chips or Sprinklers
INSTRUCTIONS
- Take an Oreo Cookie and top it with a Tablespoon of Ice Cream.
- Top that with another Oreo Cookie and freeze your Ice Cream sandwich for at least 1-2 hours
- Roll the Oreo Ice Cream Sandwich over Chocolate Chips or Sprinklers and freeze for another 5-10 minutes before you serve it.
