This is my Nana's recipe for Southern Apple Chess Pie using season's fresh Granny Smith Apples, fall spices, an all butter pie crust and a comforting custard filling. Topped with some salted caramel sauce, pecan and a scoop of ice cream! Its just a perfect fall dessert recipe which you can easily make for Thanksgiving dessert and skip on the Classic Apple Pie or the New York Apple Crumb Pie.

If you grew up anywhere near a Southern kitchen, you know that chess pie is a sacred tradition. It is the kind of dessert that defines Sunday suppers, holiday gatherings, and warm afternoon visits on the porch.

  • 1 Teaspoon Fresh Apple Cider: Nana's secret ingredient that adds a wholesome, bright fruit flavor to the custard.

Step by Step Instructions for Apple Chess Pie

Step 1: Pre Bake the Pie Crust

  1. Preheat your oven to 350°F (175°C).
  2. Carefully unroll your pie dough and press it gently into a 9 inch pie dish (a removable bottom tart dish works wonderfully if you want clean slices, or you can use a classic glass pie dish).
  3. Crimped or flute the edges decoratively.
  4. Line the inside of the pie crust with a sheet of parchment paper and fill it with pie weights or dried baking beans.
  5. Bake in your preheated oven for 10 minutes to set the structure.
  6. Remove the parchment paper and weights, then return the crust to the oven for an additional 2 to 3 minutes until the bottom looks dry and lightly golden brown. Be very careful not to over bake the crust at this stage, as it will go back into the oven with the filling!
  7. Remove the crust from the oven and set it aside to cool slightly while you prepare the filling.

Step 2: Prepare the Spiced Sugar Base

  1. In a large mixing bowl, combine the granulated sugar, all purpose flour, ground cinnamon, ground nutmeg, and fine sea salt.
  2. Whisk the dry ingredients thoroughly to ensure the flour and spices are evenly distributed throughout the sugar, preventing any clumps in your finished custard.

Step 3: Whisk the Chess Custard

  1. Crack the eggs into the dry sugar mixture one at a time, whisking gently after each addition.
  2. Pour in the melted, slightly cooled unsalted butter, pure vanilla extract, and Nana's secret step: exactly 1 teaspoon of fresh apple cider.
  3. Whisk everything together thoroughly until the mixture becomes smooth, golden, and glossy. Set the custard bowl aside for just a moment while you assemble the fruit.

  1. Take your thin Granny Smith apple slices and begin arranging them inside the pre baked pie crust.
  2. Place the slices in neat, overlapping concentric circles or straight parallel lines all across the bottom of the crust, filling it completely.
  3. Take your time with this step! Arranging the apples carefully gives the pie that gorgeous, gourmet, tart like appearance that makes it look so inviting once baked.
