August is just incomplete without Peaches. Celebrating the best of Peach season with this "Peach-y Perfect" dessert - Peach Cobbler Coffee Cake Muffins. These are moist, soft, and Peachy on the inside and equally buttery and sweet on the outside! Delicious Peaches stuffed inside a muffin batter, topped with a buttery, Cinnamon Sugar Streusel is crunchy and delicious.
I just love Peach desserts. I have been wanting to bake some juicy Peach Muffins for the longest time. I waited so long to have Peaches in the season and to get them all ripe and juicy. And finally, I am so happy sharing this recipe with y'all.
When it comes to Peaches, the first thing that comes to our mind is the juicy peachy peach cobbler. We all love them. Don't we? But, I thought let me give that a little muffin-y turn!
And these Peach Cobbler Coffee Cake Muffins tastes so good. The buttery cinnamon brown sugar streusel makes it taste YUM! And, these muffins might just be better than that good 'ol Old-fashioned peach cobbler!
The best part is that I get to use peaches! They are so juicy and so fruity. They bring alive a moist fruitiness in recipes which creates a lasting memory on your taste buds. But, there are a few secret ingredients that make my muffin - soft, moist, fruity, and peachy!
What's my secret to make them better?
I always use Greek Yogurt while making muffins. Adding Yogurt was taught to me by my good old friend who is an excellent professional baker at a high-end restaurant. She says, that when you add yogurt to your muffins you make them moist.
Next, I skip the butter and use vegetable oil instead. While making muffins I prefer using oil instead of butter. Oil makes it soft, spongy, and moist. However, with the buttery cinnamony streusel, no one would miss butter from these muffins.
Next, I never use eggs. This is because I use Yogurt and just a tad bit (1/2 teaspoon) of plain white vinegar. These two work as a replacement for egg. Do you feel that adding vinegar is odd? Well, no worries. Trust me, when I first heard about adding it, I was left totally confused. Who adds vinegar to muffins? Well, since the time I have been baking, I have always used vinegar and they have always been good.
While making the cinnamon oat streusel I make sure that I add enough brown sugar. The more brown sugar I add the sweeter and tastier the streusel tastes. Therefore I never compromise on brown sugar while making the streusel.
And if you are using canned peaches, then don't discard the peach syrup. It's unbelievably tasty. I add just 1 teaspoon of peach syrup after I had placed my muffin batter in the muffin tin. I also added just a little peach syrup while making the muffin batter. After all, this is a peach dessert, so it should taste peachy! right?
Nutmeg is another secret ingredient that takes the taste of this peach cobbler coffee cake muffins to a whole new level. It adds just a little nuttiness and makes the peach pue filling fragrant. The nutty texture added in by the nutmeg makes the peach pie filling taste amazing. Just the perfect bite that you need for a sweet fruit like a peach.
How to make these "No Fuss Peach Cobbler Muffins"?
Start off the way you start with any other muffin.
Mix oil and sugar. Add flour, milk, baking soda, baking powder, plain white vinegar, and your peaches with some peach syrup (that you get from canned peaches).
Add some yogurt to make it moist. Add in ground cinnamon and ground nutmeg to make it fragrant and flavorful. Finally, your muffin batter will be ready.
Now spoon some cut out peaches on the top for that extra taste.
Lastly, make a cinnamony buttery streusel by combining oats, butter, cinnamon, cold butter, and lots of brown sugar.
Spoon it on the muffins and Bake them until a toothpick comes out clean.

INGREDIENTS
- 1¼ Cup Whole Wheat Flour
- ½ Cup Sugar
- ½ teaspoon Baking Soda
- ½ teaspoon Baking Powder
- ¼ teaspoon Salt

Streusel
- 2 tablespoon Whole Wheat Flour

INSTRUCTIONS
- Preheat your oven to 350F or 180C. Grease a small muffin tin (6 pieces) with cooking spray or oil or butter.
- Mix flour, sugar, baking soda, baking powder, salt, in a medium-sized bowl. Add peaches (cut in slices), and peach syrup along with yogurt, and oil. Give all of that a good mix.Add milk and vinegar. You just made buttermilk at home! Give everything a good mix. Add ground cinnamon and ground nutmeg. Mix everything well.
- Use an Ice cream scoop or a spoon to place batter in the muffin tin. Add some peach cubes on top.
- Mix flour, brown sugar, Cinnamon, Cold Butter and oats using a pastry cutter or fork until it forms a crumb-like texture. Spoon it on the muffins.
- Bake these muffins at 350°F or 180°C for 20-minutes or until a toothpick inserted at the center of the muffins comes out with few moist crumbs. Enjoy!
