This Coffee and Chipotle Brined Turkey delivers a rich, savory depth of flavor with a subtle kick of smoky heat. The dark roast coffee tenderizes the meat while adding robust earthy undertones, balanced perfectly by the sweet, spicy complexity of chipotle peppers and warm spices.
I made this incredible turkey recipe a few years ago for Thanksgiving, and to this day my friends and family still talk about it. Every single year without fail, somebody brings up how unique and rich the flavor was.
The real magic comes from combining dark roast coffee with smoky chipotle peppers in adobo. It gives the meat such a deep, rich undertone while keeping every bite wonderfully juicy.

You get that initial hint of warmth from the spices, balanced out by the bold depth of the coffee, without any single flavor overpowering the rest. God, it is so good, so unique, and completely amazing. Once you try this twist on a holiday classic, you will never want to go back to a basic roast bird again.

Why You Will Love Making This Recipe
Traditional holiday centerpieces can sometimes end up dry or lacking in bold personality, but this technique guarantees maximum moisture and unforgettable taste.
The dark roasted coffee acts as a natural tenderizer for the meat while imparting a beautiful golden brown color to the skin as it roasts in the oven.
Meanwhile, the chipotle peppers bring a gentle heat that cuts through the richness of the poultry, creating a harmonious balance that pleases both spice lovers and traditional diners alike.
Preparing the brine takes less than twenty minutes, allowing the active prep to remain simple while the overnight soak does all the heavy lifting for you. It simplifies your cooking schedule on the big day because the meat stays exceptionally tender and forgiving during the roasting process.
Plus, the roasting pan drippings left behind make the most incredible, complex gravy you have ever tasted in your life.

Ingredients
For the Coffee-Chipotle Brine:
- 4 cups strong brewed dark roast coffee, cooled
- 8 cups cold water
- 3/4 cup kosher salt
- 1/2 cup packed brown sugar
- 3–4 chipotle peppers in adobo sauce, chopped (plus 2 tablespoon adobo sauce)
- 6 cloves garlic, smashed
- 2 oranges, sliced
- 3 sprigs fresh rosemary
- 4 sprigs fresh thyme
- 2 bay leaves
- 1 tablespoon whole black peppercorns
For the Turkey & Roast:
- 1 whole turkey (12–14 lbs), thawed and neck/giblets removed
- 1/2 cup unsalted butter, softened
- 1 tablespoon chipotle powder or smoked paprika
- 1 tablespoon onion powder
- Fresh rosemary, thyme, and dried red chilies (for platter garnish)
Step-by-Step Instructions
- Prepare the Brine:In a large pot, combine 2 cups of the water, kosher salt, brown sugar, smashed garlic, chopped chipotle peppers, and adobo sauce. Warm over medium heat just until the salt and sugar dissolve. Remove from heat and stir in the cooled dark coffee and remaining cold water to bring the brine to room temperature or colder.
- Brine the Turkey:Place the turkey in a large brine bag or food-safe bucket. Pour the cooled coffee-chipotle brine over the turkey, ensuring it is fully submerged. Add the orange slices, rosemary, thyme, bay leaves, and peppercorns. Seal and refrigerate for 12 to 24 hours.
- Prep for Roasting:Remove the turkey from the brine and discard the liquid. Pat the turkey completely dry with paper towels inside and out—dry skin is key to achieving a crispy finish. Let the turkey sit at room temperature for 30 minutes.
- Season & Roast:Preheat your oven to 325°F (165°C). Mix the softened butter with chipotle powder and onion powder. Gently loosen the skin over the turkey breast and rub half the butter mixture underneath, spreading the rest evenly over the outside skin. Truss the legs loosely with kitchen twine.
- Bake to Perfection:Place the turkey breast-side up on a rack in a roasting pan. Roast for approximately 3 to 3.5 hours, basting occasionally. The turkey is done when an instant-read thermometer inserted into the thickest part of the thigh reads 165°F (74°C). If the skin browns too quickly, tent it loosely with aluminum foil.
- Rest & Serve:Transfer the turkey to a serving platter and let it rest for 20 to 25 minutes before carving to allow the juices to redistribute. Garnish the platter with fresh rosemary sprigs and whole dried chilies.
