Mango Gazpacho is a refreshing and zingy chilled Spanish soup recipe which is perfect hot summer afternoons appetiser. This zesty Mango Gazpacho has authentic Spanish flavours fusioned with Tropical Summer flavours, which is perfect for the summer season
I have never made Gazpacho at home and let me be honest, this was my first attempt at it and I loved it so so so much. I am a huge fan of tropical flavours and this Mango Gazpacho, reminded me of a cool shade of a Mango tree on a hot summer afternoon.
I love Spanish recipes and Gazpacho is one of my all-time favourite summer recipes. Whenever I am at home especially during the Summer holidays, this is my go-to recipe.
However, I never made this myself. Always, my mom used to make it and Man she was so good at making the best Gazpachos in the world. I and my Husband love it so much that we even freeze some of what we bring from home and enjoy it later.
How to make Mango Gazpacho
This essential Spanish cold soup is a summer favourite. There are so many varieties of Gazpachos. Made with raw ingredients, this takes so little time yet is so huge on flavours.
The basic Gazpacho ingredients are some Tomatoes, Red Onions, Cucumber and some Green Bell Peppers. After this 4 basic ingredients, you can add any fruit or veggies of your choice and it’s going to taste so awesome.
So, first, I started with gathering my raw ingredients which were - Red Onion, Green Bell Pepper, Cucumber and a Ripe Mango. I chopped all of these ingredients and put them in the blender along with some salt, black pepper powder, some sugar, white wine vinegar, cumin and of course, some olive oil.
I mixed all of these ingredients, until, I got myself a smooth Gazpacho ready. I poured it in my soup bowl and topped with some Cucumber slices and a spring of fresh cilantro.
Also, I squeezed 1 lime juice from the top and put it in the refrigerator for 2-3 hours, After that, I got it out and enjoyed it with some Croutons! It tastes so good, I mean seriously! Just roll your eyes back good.
Ideally, you can top your Gazpacho with any veggies you love. Traditionally some Onions, Tomatoes and Green Bell Pepper are put on the top along with some freshly grounded black pepper.
However, since this is a Mango Gazpacho, you can put some Mango chunks on top or top with some more grounded black pepper if you wish to.
You can also drizzle some Yogurt or Sour cream on top and enjoy this Gazpacho.
Other possible variations to this recipe
You can add any veggies of your choice in this Gazpacho. Mango Gazpacho works great with some Zucchini or Summer Squash.
You can add any fruits you love. Especially watermelon in my favourite summer fruit and adding it brings in a sweet, mild and earthy flavour to the Gazpacho.
You can add any spices in the Gazpacho. I think Mango in itself is a sweet fruit. So, a pinch of Cayenne will only make it better.

This Mango Gazpacho tastes so refreshing, zesty and sublime. It has an earthy sweetness to it because of the Mango and Red Onions, also there is a bit of heat due to the green bell pepper. The Cucumbers add to the calming and soothing flavours of this Gazpacho.
Mango Gazpacho
INGREDIENTS
- 1 Cup Mangoes chopped
- ½ Cup Red Onion chopped
- 1 Cup Cucumber chopped
- ½ Cup Green Bell Pepper chopped
- 1 teaspoon Salt
- 1 tablespoon Grounded Black Pepper
- 2 tablespoon Olive Oil
- ½ teaspoon Granulated Sugar
- 1 teaspoon White Wine Vinegar
- 1 teaspoon Ground Cumin
- 2 tablespoon Lime Juice
INSTRUCTIONS
- In a mixing bowl add the veggies and chopped Mangoes
- To it add salt, black pepper powder, granulated sugar, white wine vinegar, cumin, and some olive oil. Blend everything together until you have a smooth and creamy Gazpacho ready.
- Pour this Gazpacho in a bowl and top with Lime Juice, Chopped Cucumbers, and spring of fresh cilantro.
