Cake Batter Funfetti Chocolate Chip Cookies

Cake Batter Funfetti Chocolate Chip Cookies are the cute, colorful and celebratory cookies that everyone will love because these babies will remind you of your childhood!

These Funfetti Choco chip cookies made with vanilla cake mix, choco chips and loads of colorful Funfetti are soft, moist and sweet Cookies, you can make easily at home. These cookies are a marriage between chocolate chip cookies and Funfetti cake. I know! It's like you're back in your childhood days 🙂

The best part about these cookies is how cute they look one they are ready. You'll really feel like gobbling up these cookies with milk and trust me you will regret later, as to why did they get over so fast. These cookies really will remind you of your childhood favorite Funfetti cake and your all-time favorite choco-chip cookies.

I have made these Funfetti Chocolate Chip Cookies without eggs. I really hate using Eggs in my cookies. Well, there is no baking science or logic behind it. It's just that, I do not like to use it. So, as an alternative, I use White Vinegar and Yogurt for my cake. And trust me they work just fine. You won't be able to tell the difference.

These Funfetti Chocolate Chip Cake Batter cookies are really moist, thick and chewy. They are also pillowy soft since these are made with cake batter. However, its the softness of these cookies that'll make you fall in love with them.  Plus these are so colorful cookies that they are perfect for birthday parties or Spring and Easter Parties or just any day. After all, every day is a beautiful day to have colorful Funfetti Choco Chip cookies. I Baked these cookies from scratch and they taste divine.

How to store Funfetti Chocolate Chip Cookies?

What I really love about these cookies is that they are so freezer friendly. You can keep these cookies in the freezer but in an airtight box or container. However, remember to keep them lined with parchment paper. Do not just stuff your cookies in the box or they will get stuck to one another and you will not be able to have those.

How to make Cake Batter Funfetti Chocolate Chip Cookies

To bake my favorite Cake Batter Funfetti Chocolate Chip Cookies, I first mixed my dry ingredients which were Vanilla Cake Mix with AP Flour and Baking Soda. I mixed these well in a mixing bowl and kept it aside.

Meanwhile, I started creaming my Butter and Sugar. I have used Brown sugar for these Funfetti chocolate chip cookies. Many people prefer using a combination of both granulated sugar and white sugar, However, I did not and my seemed to come out just fine. I used a handheld mixer to cream my butter and sugar for 3 minutes at high speed.

Then to this, I sieved my dry ingredients and folded it lightly with a wooden spatula. Finally, to this, I added the Yogurt and Vinegar and folded it again. Also to this, I added my choco chips and colorful Funfetti and then, I gave it a quick stir with my spatula. I used very little semi-sweet chocolate chip cookies. This is because a lot of chocolate chip cookies make the cookies flat. So to avoid that, while making the cookie dough, I use a very little amount of Chocolate chips.

Finally, I put my cookies for baking at 350 F for 10 minutes. After that, I got them out and quickly pressed in some Funfetti and Chocolate Chips on top of my cookies. I generally do this because this is the best time to add extra chocolate chips or Funfetti to your cookies. This will not flatten your cookies and they'll come out just the perfect size and shall be tall for sure.

Finally, I placed them back in my hot oven for another 5-10 minutes. This step ensures that the lower parts of my cookies get that gorgeous crust, while the inside is still soft and moist. The heat from the oven helps bake the bottom of the cookies for an additional 5 minutes and this helps hold the cookie tight.

And then, my Cake Batter Funfetti Chocolate Chip Cookies were ready. I baked these cookies for my kid's birthday last year for the first time and they were so good that since then, I have made these for almost all occasions and holidays. These Cake Batter Funfetti Chocolate Chip Cookies are officially the favorite cookies of my family. And I can never get enough of baking these Funfetti Choco chip cookies. The colorful cookie dough with choco chips reminds me of my happy place! I don't know why I just feel so elated seeing them.

So, that's how you can make Cake Batter Funfetti Chocolate Chip Cookies. It's a really easy cookies recipe and looks so festive and celebratory that it can brighten up any dull day. Moreover, you can keep it stored in the freezer for a long time and serve to guests and friends later.

I have used the very usual and commonly found Vanilla Cake mix. I use this because any other flavored cake mix gets in the way of confetti and chocolate chips and then it's all about it. I wanted my Funfetti and Chocolate Chips to be the star of the show and nothing better to accommodate them, than a perfectly simple but divine Vanilla Cake Mix. Nevertheless, you can always use any flavored cake mix you wish to. Also, only use the dry cake mix while making these Cake Batter Funfetti Chocolate Chip Cookies at home.

INGREDIENTS

Wet Ingredients

  • ¼ Cup Butter Softened
  • 1 Cup Brown Sugar
  • 1 large egg
  • ½ teaspoon Vanilla Essence

Dry Ingredients

  • 1 Cup Cake flour
  • ¼ Cup Vanilla Cake Mix (Dry)
  • ½ teaspoon Baking Soda
  • ¼ Cup Semi Sweet Choco Chips
  • ¼ Cup Colorful sprinkles

INSTRUCTIONS

  • Preheat your oven to 180C or 350 F and line your baking tray with parchment paper.
  • First cream melted butter, and brown sugar for 3 minutes or until light and fluffy with a stand mixer or a handheld mixer.
  • Add egg and vanilla essence and whisk well for another 1-2 minutes.
  • Sieve the dry ingredients - (AP Flour, Baking soda, and Vanilla Cake mix) with a siever and add them to your wet ingredients.
  • Whisk well until everything is combined.
  • Add Rainbow Funfetti and Chocolate Chips into the cookie dough and lightly fold them into the batter. Your batter should not be very moist.
  • Bake your cookies for 10 minutes.
  • After 10 Minutes, get your cookies out and put in some more chocolate chips and Funfetti on top of the cookies.
