Summer Chili is easily one of my favorite weeknight dinners ever. Its super easy to make and tastes delicious. You just sauté onion and garlic in a Dutch oven before browning the ground beef with your favorite chili spices. Stir in chopped zucchini, yellow squash, and tomatoes, simmering briefly before adding the beans, corn, sugar, and corn starch slurry. Finish by topping the mixture with fresh raw zucchini and cherry tomatoes for a bright, comforting, and perfect weeknight summer meal or a great Summer BBQ Side.

Summer is truly one of the best times of the year to utilize all the incredible produce we have available at our fingertips.

When the markets are overflowing with vibrant zucchini, sun ripened yellow squash, and the most flavorful tomatoes, it feels like nature is inviting us to create something special. While many people associate chili exclusively with chilly autumn evenings or frozen winter nights, I have always believed that it makes for the perfect hearty, comforting meal regardless of the season. Summer Harvest Chili: The Ultimate One Pot Comfort Meal

Growing up in the South, chili has always been a fundamental comfort food in our household. We make it during almost every season because it is incredibly easy to prepare and makes for a fantastic, quick weeknight dinner.

There is just something inherently satisfying about a warm, savory bowl of chili that brings everyone together at the table. What better way to honor the season than to take that fresh, garden bounty and transform it into a delicious, one pot comfort meal that feeds the soul?

The Ingredients

To create this summer version of a classic, you need ingredients that celebrate the brightness of the harvest while maintaining that deep, savory base we all love.

  • Olive Oil: The perfect healthy fat to begin your aromatic base.
  • Onions and Garlic: These are finely chopped to build the foundation of flavor for the entire dish.
  • Ground Beef: This provides the protein and the hearty texture that makes chili so filling.
  • Chili and Taco Seasoning: These spice blends offer the essential warmth and complexity required for a great chili. I use my homemade Chili Seasoning and Taco Seasoning. If you're using store bought ones it already has cornstarch in it so you do not need to add that later.
  • Salt, Pepper, and Paprika: I like to add about half a teaspoon of paprika for a little extra depth and heat, though you can certainly skip it if you prefer a milder profile.
  • Zucchini and Yellow Squash: These summer staples add texture, nutrients, and a beautiful seasonal color to the pot.
  • Heirloom and Beef Tomatoes: Using a mixture of these varieties adds incredible flavor, sweetness, and juiciness to the base.
  • Corn: Adds a subtle sweetness and a satisfying pop of texture.
  • Pinto and Kidney Beans: Essential for that classic chili heartiness; keep the juices for extra flavor.
  • Sugar: A small amount, roughly two teaspoons, helps balance the natural acidity of the tomatoes.
  • Corn Starch: If you are using homemade seasonings, a quick slurry of one teaspoon of corn starch and water ensures the chili reaches the perfect, thick consistency.
  • Cherry Tomatoes: Reserved for a fresh, raw topping that adds a pop of brightness at the end.
  • Shredded Cheddar: The final touch for a creamy, salty finish.

Step by Step - Summer Chili Recipe

The secret to a great chili is starting with the right aromatics and perfectly browned meat.

Cook the ground beef and veggies

  • Start by taking a large Dutch oven and heating your olive oil over medium heat.
  • Add your finely chopped onions and garlic, sautéing them until they become translucent and fragrant.
  • Add the ground beef to the pot and break it apart with a wooden spoon as it cooks.
  • Once the beef is browned, stir in your chili seasoning, taco seasoning, salt, pepper, and the optional paprika.
  • Ensure all the spices are well incorporated and the beef is fully cooked through before moving to the next stage.

Add Zucchini, Tomatoes, and Squash now

Garnish with leftover Zucchini and cherry Tomatoes

Adding raw elements at the end provides a contrast in temperature and texture that makes this meal feel sophisticated yet accessible.

  • When you added the zucchini earlier, be sure to set aside a few slices to keep fresh.
  • Just before serving, stir in these fresh, raw zucchini pieces along with a handful of chopped cherry tomatoes.

Can I make Summer Chili in a Crockpot?

Yes ofcourse you can! If you're like me and hate cooking in the kitchen in hot summer months, try this dump and go summer chili recipe. To prepare this in a crockpot, simply sauté your onions, garlic, and ground beef in a skillet before adding them to the slow cooker along with all remaining ingredients, except for the final garnishes.

Set the cooker to low for 4 to 6 hours or high for 2 to 3 hours, allowing the flavors to meld together perfectly.

INGREDIENTS

  • 1 tablespoon Olive oil
  • 1 medium sized Onion finely chopped
  • 2 cloves Garlic minced
  • 1 lbs Ground beef
  • 2 tablespoon Chili powder
  • 1 tablespoon taco seasoning
  • ½ teaspoon Smoked Paprika optional
  • 1 large Zucchini diced
  • 1 large Yellow Squash diced
  • 2 cups Mixed heirloom and beef tomatoes diced
  • ½ cup Corn
  • 1 can Pinto Beans
  • 1 can Kidney Beans
  • 2 teaspoon granulated sugar
  • 1 teaspoon Corn starch mixed with 2 tablespoon water
  • Shredded cheddar, fresh cherry tomatoes, raw zucchini slices diced, cilantro and lime juice for topping (optional)

INSTRUCTIONS

  • Heat oil in a Dutch oven, sauté the onion and garlic for 2-3 min over medium high heat, add the ground beef and brown the beef thoroughly for 2-3 min over medium high heat.
  • Stir in seasonings - Chili Seasoning, Salt, Pepper, Smoked Paprika, and Taco Seasoning, and then add the diced squash, zucchini, and tomatoes, cook covered for 5 minutes over medium high heat, scrapping off the bottom as required. (keep some chopped Zucchini and Yellow Squash and Cherry Tomatoes aside for garnish)
  • Now add in the beans along with the juices, corn, granulated sugar, and the cornstarch slurry to thicken, Stir it all together and simmer over low heat until flavors harmonize for 2-3 min.
  • Garnish generously with the chopped Zucchini and Yellow Squash and Cherry Tomatoes. Add some sour cream on top. Garnish with shredded sharp cheddar cheese, cilantro and lime juice. Serve hot aside of your favorite bread.

Notes

Adjust the sugar if your tomatoes are particularly acidic. The raw vegetable garnish is essential for adding a crisp, refreshing crunch that distinguishes this summer version from winter stews.
