Weeknight Summer Chili - Summer Bounty Skillet Chili

INSTRUCTIONS
Heat oil in a Dutch oven, sauté the onion and garlic for 2-3 min over medium high heat, add the ground beef and brown the beef thoroughly for 2-3 min over medium high heat.
Stir in seasonings - Chili Seasoning, Salt, Pepper, Smoked Paprika, and Taco Seasoning, and then add the diced squash, zucchini, and tomatoes, cook covered for 5 minutes over medium high heat, scrapping off the bottom as required. (keep some chopped Zucchini and Yellow Squash and Cherry Tomatoes aside for garnish)
Now add in the beans along with the juices, corn, granulated sugar, and the cornstarch slurry to thicken, Stir it all together and simmer over low heat until flavors harmonize for 2-3 min.
Garnish generously with the chopped Zucchini and Yellow Squash and Cherry Tomatoes. Add some sour cream on top. Garnish with shredded sharp cheddar cheese, cilantro and lime juice. Serve hot aside of your favorite bread.
Notes
Adjust the sugar if your tomatoes are particularly acidic. The raw vegetable garnish is essential for adding a crisp, refreshing crunch that distinguishes this summer version from winter stews.
