So yesterday I baked these Cute Easter Bunny Cupcakes and they were so freaking cute. Literally I couldn't stop oogling at that for a good ten minutes or so. π°π°π§
These Bunny Cupcakes are inspired from John's recipe at Preppy Kitchen. And I must say I am in love with these Bunny Cupcakes recipe for Easter.
They are so easy to make and turns out super amazing and beautiful.
Vanilla Cupcakes with Easter Bunny Decoration
So I've baked these simple Vanilla bean Cupcakes and the frosting is a simple cream cheese frosting. I just love the flavour combination of Vanilla with Cream Cheese. They both go excellent together.
Ingredients needed to make Bunny Cupcakes for Easter
For the Cupcakes
- All Purpose Flour
- Baking Powder
- Brown Sugar
- Milk
- Eggs
- Pure Vanilla Extract
- Pure Vanilla Extract
- Vegetable Oil
- Cream Cheese
- Granulated Sugar (for cream cheese frosting)
For Bunny Decoration
- Shredded Coconut
- Marshmallows
- Pink sugar sprinkles
- Candy Eyes
- Pink Candy Hearts or Pink M&Ms
How to make Bunny Cupcakes π§
Step 1: Bake the Vanilla Cupcakes
- Preheat the oven to 350F or 180C and line a muffin tin with cupcake liners
- Combine All Purpose Flour with Baking Powder
- Add all the wet ingredients to it - Brown Sugar, Vanilla Extract, Milk, Eggs, & Vegetable Oil
- Combine everything well. Transfer to lined muffin tin
- Bake the cupcakes @350F or 180C for 15-20 min.
Step 2: Make Cream Cheese Frosting
- Beat Cream Cheese with Granulated Sugar and Vanilla Extract until creamy
- Frost the baked and cooled cupcakes with the Cream Cheese frosting.
Step 3: Making Bunny Ears with Marshmallows
- Coat the frosted cupcakes with shredded coconut
- Cut a Marshmallow in half diagonally to make Bunny ear pieces shapes and coat them with pink sugar sprinkles
- Use a bit of heavy cream to stick them to the cupcakes like Bunny Ears
- Add the Candy Hearts & Pink heart candy to bring these cupcake bunnies to life.
Can I use cake mix?
Yes of course. Instead of baking cupcakes using all of the mentioned ingredients from scratch you can use cake mix to bake these Bunny Cupcakes.

Easter Bunny Cupcakes
INGREDIENTS
Dry Ingredients
- 1Β½ cup All Purpose Flour
- 1 teaspoon Baking powder
Wet Ingredients
- 1 cup Brown Sugar
- 1 cup Milk
- 2 large Eggs
- 1 teaspoon Pure Vanilla Extract
- ΒΌ cup Vegetable Oil
Cream Cheese Frosting
- 8 oz Cream Cheese
- 1 cup confectioner's sugar
Decoration
- 1 cup Shredded Coconut
- Marshmallows
- Pink Sprinkles
- Candy Eyes
- Pink heart Candy
INSTRUCTIONS
- Preheat the oven to 350F or 180C and line a muffin tin with liners. Whisk the dry ingredients together until combined.
- Add the wet ingredients into it and fold to combine everything. Transfer to lined muffin tin.
- Bake the cupcakes for 15 min. Allow them to cool down before adding the frosting
- Beat Cream Cheese with icing sugar to make cream cheese frosting. Frost the cupcakes with the cream cheese frosting
- Coat the cupcakes with shredded coconut. Cut a Marshmallow in half diagonally and coat with Pink sprinkles to make Bunny Ear pieces. Add them to the cupcakes. Add candy eyes and pink candy hearts to make bunny face.
