Cheesy mushroom potato casserole is a comforting casserole recipe that is filled with the goodness of Mushrooms and Potatoes. Filled with Potato and Mushrooms and loads of cheese, this Potato bake might be easy to make but is filled with comforting flavors.

This Cheesy Mushroom and Potato Casserole taste crispy, cheesy, mushroomy garlicky. The potatoes are crunchy and crispy on the outside but are sweet, soft and juicy on the outside. There is a gorgeous crust of cheese on the top which makes it crunchy, cheesy and filled with deep seed parmesan flavors. The Mushrooms are very soft and moist in the inside. They are evenly cooked. They do not taste raw at all. The onions and garlic along with potatoes and mushrooms and cheese feel like a perfect combination for the casserole.

Let's make Cheesy Mushroom and Potato Casserole from Scratch

Mushroom and Potato Bake is a delicious casserole recipe.  It's creamy, cheesy and so comforting. Even if you are not a Mushroom lover, this delicious Casserole recipe is something you would want to add into your weekly rotations, because it's so easy and quick to make and needs some bare minimum ingredients that are almost omnipresent in the pantry. Baking this casserole will fill your home with that burning Cheese smell and it feels divine. The smell of Cheese can comfort any heart!

It was a crisp fall evening in October and I had just come home from work. I had a rough day at work. You know how there are days like those! I was tired and didn't want to lift a bone. However, half-hearted I was, I still found myself standing in the kitchen and contemplating what to cook for dinner.

Just then I spotted a pack of Mushrooms. The thought of Mushrooms usually wears me out. But since I had nothing else, I decided to give it a go.  You know how it's in the kitchen. I don't really sit down and think. It's just really organic and it's usually while chopping my veggies, I develop my recipe. So, I eventually decided to bake my Mushrooms with some Potatoes. I had previously tasted something like that at my friend's place and I didn't quite like it. So, I was reluctant in the beginning. Then I thought, let's give this a try and the next thing I knew was sauteing my veggies and coving them with loads of cheese to just hide the mushrooms. However, I had no idea that finding those Mushrooms and Potatoes between those astral layers of cheese would be the best thing about dinner that night! It was a blast. My husband and kids loved it and were wanting more of it. You know, there are days when you are reluctant about the reactions and you make a small portion, and it's exactly that day that your recipe turns out to be so good, that you feel so awkward and sad when people beg for more, but you have none left! So, I made this cheesy mushroom potato casserole again the same weekend and this time we actually managed to save some!

How to make Potato and Mushroom Casserole at home

To make Cheesy Mushroom and Potato Casserole, I started with chopping my Mushrooms. I had Portobello Mushrooms. So I halved them. Then I heated a skillet with some Olive Oil and to this, I added my chopped Mushrooms and Potatoes. To chop my Potatoes, I first halved them. Then I sliced my halves into thin semi-circles from the top. Not really very thin as then Potatoes will burn. Just 2 -3 semi-circle wedges of Potatoes. Then I sauteed them over low flame for 2 minutes. To this, I added chopped Onions and garlic. Then I tossed them well and seasoned them with some salt and black pepper powder. Finally, I took out my Casserole dish and greased it with butter. To this I placed my veggies saute and topped it with some Mozzarella Cheese, followed by Parmesan cheese and 6 small chunks of Processed cheese. And eventually, I placed my Cheesy Mushroom and Potato Casserole to bake at 338 F for 60 minutes.

Crunchy, Chewy with the perfect taste of casserole provided by the cheese. The potatoes give a sweet flavor and cheese gives a zing of sourness to this casserole. The crust on the top is very delicious. The juicy Mushrooms with the crusty cheese, makes the Mushrooms taste even better. The Mushrooms soak in the flavors of the cheese and get even juicier and creamier. The onions provide a great balance of sweetness, which when combined with the garlicky flavors of cheese gives a perfect flavor of casserole.

INGREDIENTS

  • 2 tablespoon olive oil
  • ½ Cup Potatoes chopped
  • ½ Cup Mushrooms
  • 1 teaspoon Black Pepper
  • ½ Cup Mozzarella Cheese
  • ¼ Cup Parmesan Cheese
  • ¼ Cup Processed Cheese

INSTRUCTIONS

  • Preheat oven to 340F or 170C and grease a casserole dish with butter.
  • Shallow fry Halved Mushrooms and Chopped Potato over a skillet with Olive Oil. Until they turn golden brown from sides. Season them with some salt and freshly grounded black pepper.
  • Pour all your mushroom and Potato mix on it.
  • Drizzle some Mozzarella Cheese, some Parmesan Cheese and top it off with some processed cheese.
  • Bake for at least one hour.

Notes

Check if your casserole is done at 40 minutes and then re-check at 60 minutes.
