It's one of my favorite 20 Quick Savory Pumpkin Recipes for Fall.

Yes, you read that right—these little gnocchi aren't just pumpkin-flavored; they're shaped like tiny, adorable mini pumpkins! 🎃

Whether you’re hosting a fall dinner party, looking for a festive weekend cooking project, or just wanting to impress your family with a showstopping dish, this recipe is guaranteed to be a huge hit. Don't worry if you've never made gnocchi from scratch—I’m breaking down every step with photo-by-photo visual guides so you can follow along effortlessly in your own kitchen. Let's dive into the magic!

Why You'll Fall in Love With This Recipe

  • Pure Comfort in Every Bite: Pillowy-soft gnocchi meet a rich, garlic-infused parmesan Alfredo sauce, elevated with fresh spinach and fried sage.
  • Surprisingly Easy to Shape: No special molds needed! All you need is a toothpick or skewer to score the ridges and a pepita (pumpkin seed) for the stem.
  • Made with Simple Pantry Staples: Real pumpkin puree, freshly grated Parmesan, all-purpose flour, egg yolks, and classic seasonings come together seamlessly.
  • A Feast for the Eyes: It’s almost too pretty to eat (almost!). The vibrant orange gnocchi resting in a snowy-white, herb-flecked sauce make an absolute showstopper.

The Ingredients You'll Need

For the Pumpkin Gnocchi Dough:

  • 1 cup Pure Pumpkin Puree (canned or fresh; if using canned, make sure it’s 100% pure pumpkin, not pumpkin pie mix!)
  • 2 Large Egg Yolks (adds richness and binds the dough without making it wet)
  • ½ cup Freshly Grated Parmesan Cheese (finely shredded, microplane-style for smooth texture)
  • 2 to 2½ cups All-Purpose Flour (plus extra for dusting your work surface)
  • 1 teaspoon Coarse Sea Salt or Kosher Salt
  • ¼ teaspoon Ground Nutmeg (optional, but gives that authentic warm autumn depth)
  • Raw Pumpkin Seeds (Pepitas) (for the pumpkin stems!)

For the Creamy Spinach Parmesan Alfredo Sauce:

  • 3 tablespoon Unsalted Butter
  • 3 cloves Garlic, minced
  • 1 cup Heavy Cream
  • 1 cup Whole Milk (or extra heavy cream for maximum richness)
  • 1 cup Freshly Grated Parmesan Cheese
  • 1½ cups Fresh Baby Spinach, coarsely chopped
  • 8–10 Fresh Sage Leaves (for frying in butter)
  • Freshly Cracked Black Pepper & Red Pepper Flakes (to taste)
  • Pinch of Salt

Step-by-Step Guide: How to Make Pumpkin-Shaped Gnocchi

Step 1: Combine the Base Ingredients

In a large ceramic mixing bowl, make a well in your all-purpose flour. Add the pure pumpkin puree to the center, then add the two rich egg yolks, a generous heap of freshly microplaned Parmesan cheese, and a sprinkle of coarse sea salt.

Pro Tip for Perfect Gnocchi: Moisture is the enemy of light, pillowy gnocchi! If your pumpkin puree seems overly wet or watery, press it between a few layers of paper towels to extract excess moisture before adding it to the bowl. This prevents you from needing to add too much flour, keeping the gnocchi melt-in-your-mouth tender!

Gently mix the ingredients with a wooden spoon or spatula until a shaggy, cohesive dough begins to form.

Step 2: Roll and Portion the Dough

Turn the dough onto a lightly floured marble countertop or large cutting board. Gently knead it just a few times until smooth—be careful not to overwork the gluten, or the gnocchi can become dense.

Shape the vibrant orange dough into a uniform block or log. Using a sharp chef's knife, slice the dough cleanly into even, bite-sized square pillows.

Step 3: Shape into Mini Pumpkins

Now for the fun, artistic part! Take one bite-sized piece of dough and gently roll it between your palms to form a smooth ball.

  1. Place the dough ball on your palm or work surface.
  2. Using a toothpick, the spine of a small pairing knife, or a dough tool, press vertical ridges all around the sphere to create 6 to 8 pumpkin segments.
  3. Gently press down slightly on the top to give it a classic squat pumpkin shape.
  4. Press a single raw pumpkin seed (pepita) right into the top center to create the stem!

Repeat with the remaining dough and set it on a floured baking sheet while you prepare the sauce.

Step 4: Prepare the Creamy Spinach Parmesan Alfredo Sauce

Set a wide stainless steel or ceramic skillet over medium heat. Melt the unsalted butter, then toss in the fresh sage leaves and crisp them for 1–2 minutes, until fragrant and crackling. Remove the crispy sage leaves and set them aside for garnishing.

In the same pan, add the minced garlic and sauté in the infused butter until golden. Pour in the heavy cream and milk, bringing the mixture to a gentle simmer. Whisk in the freshly grated Parmesan cheese until completely smooth and velvety. Stir in the chopped baby spinach and let it wilt gently into the warm sauce. Season with freshly cracked black pepper and a pinch of red pepper flakes.

Step 5: Cook the Gnocchi & Assemble

  1. Bring a large pot of salted water to a gentle rolling boil.
  2. Drop the pumpkin gnocchi into the water in batches. Cook for about 2 to 3 minutes—they will float to the top when they are done!
  3. Using a slotted spoon or spider skimmer, carefully transfer the cooked gnocchi directly into your simmering spinach Alfredo skillet.

Gently scoop the pumpkin gnocchi up with your serving spatula to ensure every single piece is lovingly coated in that silky, garlic-parmesan cream. How to Serve & Store

  • Serving Suggestion: Serve immediately, straight from the skillet! Top with extra microplaned parmesan, crispy fried sage leaves, and a final crack of fresh black pepper.
  • Make Ahead / Freezing: You can shape the uncooked gnocchi ahead of time! Arrange them on a parchment-lined baking sheet and freeze until solid, then transfer to a freezer-safe bag for up to 2 months. Boil them straight from frozen—just add an extra minute to the cooking time.
  • Leftovers: Store leftover gnocchi and sauce in an airtight container in the fridge for up to 3 days. Reheat gently on the stovetop over low heat, adding a splash of cream or milk to loosen the sauce.
