Carrot Cake Truffles: My Favorite Easter Treat to Share

Easter is one of my favorite times to make sweet treats for friends, neighbors, and little ones in the community. There’s something so special about sharing homemade goodies, and one of my absolute go-to Easter treats is Carrot Cake Truffles.

These little bites of joy are made by mashing up homemade or store-bought carrot cake, rolling them into bite-sized balls, dipping them in creamy white chocolate, and finishing them with a drizzle of orange candy melts.

They look festive, taste incredible, and always bring a smile to anyone who tries them!

Why I Love Making Carrot Cake Truffles for Easter

Carrot Cake Truffles are perfect for so many Easter occasions. Whether I’m packing them up for a classroom party, making a batch for neighbors, or just keeping a stash in the fridge for Easter weekend snacking, they’re always a hit.

A Fun and Easy Classroom Treat

When I need to bring a treat to an Easter school party, I always choose these truffles.

They’re small, mess-free, and easy for little hands to grab and enjoy. Plus, they have that wonderful carrot cake spice flavor with the smooth sweetness of white chocolate—kids absolutely love them!

And since they’re bite-sized, they feel like a special treat without being overwhelming.

A Thoughtful Gift for Neighbors

One of my favorite Easter traditions is putting together little treat boxes for neighbors, and these truffles are always included. I love how easy they are to make in big batches, and they look so beautiful in a little box with some Easter-themed wrapping.

It’s such a simple way to spread joy, and I always get messages from neighbors saying how much they enjoyed them...!!

A Great Way to Use Up Leftover Carrot Cake

If you’re like me and sometimes end up with extra cake after a holiday gathering, this recipe is a lifesaver! Instead of letting leftover carrot cake go to waste, I mash it up and turn it into truffles.

No need for extra frosting—the moisture from the cake itself is enough to hold everything together. It’s such a satisfying way to repurpose cake and create something new and delicious.


If you have made Carrot Cakes before then this recipe will make you get the best out of your carrot cake. After all, who in this world doesn't like carrot cake? In fact, what is there to not like about it.

The flavorful bite of carrot, the cream cheese frosting, cakey texture! Umm... SOO GOOD. It's so much carrot and so little of everything else.

So, how to make these Carrot Cake Truffles?

Well, we start by making a carrot cake with cream cheese frosting. Once our cake is ready and our frosting is done. We crumble the cake and make small carrot cake balls. We use a little cream cheese frosting for the balls to stick to each other.

Sometimes it is so dry that it will not form a proper ball. So we use some more cream cheese and make a perfect ball. Don't use too much cream cheese frosting to make a wet cake ball. We refrigerate our cake balls for about an hour or two in the fridge.

We melt white chocolate or white candy melts in a non-stick pan or in a microwave oven. We coat our cake balls in white chocolate.

Now we will keep this in the fridge for some more time so that the white chocolate coating is well set. In a separate bowl, we melt orange candy melts and use a piping bag or spoon to drizzle it over our white chocolate coated carrot cake truffles.

Yes! It's just that easy.

  • Walnuts - Many people use walnuts to decorate their white chocolate-covered carrot cake balls. It gives it a nice nutty texture and taste.
  • Pecans - If you don't have walnuts you can use pecans to decorate your carrot cake truffles. It would taste equally amazing.
  • Gluten-Free Carrot Cake Truffles - To Make this recipe gluten-free you can use coconut flour and coconut oil. It will also add a nutty taste to your truffles.

Some Important Tips for Carrot Cake Truffles

  • Do not add too many spices for your carrot cake. Add 1/2 teaspoon of ground cinnamon, ground nutmeg, and some ground cloves (if you need it to be a little spicier).
  • Do not use too much cream cheese to make your cake balls or else it will be too wet and won't form good balls.
  • Do not work with too cold cake balls. Let it sit at room temperature for about 5 minutes and then work with it.

Healthy Raw Carrot Cake Truffles

Now, if I want a healthier option (or just want something a little different), I love making raw carrot cake truffles.

How I Make Raw Carrot Cake Truffles

To make these, I grab a handful of ingredients and toss them into a food processor. Here’s what I use:

  • 1 cup walnuts (or almonds if I want a milder flavor)
  • 1/2 cup shredded carrots (I microwave them for a few seconds to soften them up)
  • 1/2 cup coconut flour
  • 2 tablespoon coconut oil
  • 5-6 pitted dates for natural sweetness
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • A pinch of salt

I blend everything together until it forms a sticky dough, then roll it into little balls.

For a special touch, I dip them in melted white chocolate—it makes them feel extra indulgent while still being packed with good-for-you ingredients.

These are fantastic for Easter office treats too—healthier, but still satisfying when you need a sweet pick-me-up during the workday.

Why I Love No-Bake Truffles

Sometimes, I just don’t feel like turning on the oven, and that’s when these no-bake truffles come to the rescue.

They come together so quickly, and I love that I can make them ahead of time and store them in the fridge for whenever I need a snack.

The combination of coconut flour and coconut oil gives them a rich, moist texture, and since coconut oil is naturally vegan and packed with healthy fats, it makes these truffles both nutritious and delicious.


Vegan Carrot Cake Truffles with Cashew Frosting

For my vegan friends, I like to make a plant-based version of carrot cake truffles that’s just as delicious as the traditional ones. Instead of cream cheese frosting, I use a dreamy cashew frosting that’s rich, creamy, and naturally sweetened.

How I Make Cashew Frosting

This frosting is so easy and honestly, I use it for more than just truffles! Here’s how I do it:

  • I soak 1 cup of cashew nuts in warm water for at least 2 hours.
  • Then, I drain them and blend them up with 1/3 cup of vegan milk (I love using almond or oat milk).
  • I add a tiny bit of natural sweetener—xylitol or maple syrup work great.
  • After blending until completely smooth, I pop it in the freezer for about 10-15 minutes to firm up.

Once the frosting is ready, I use it to coat my vegan truffles or drizzle over the top. When flash-frozen, it sets up beautifully and gives the truffles a deliciously creamy finish.


The Secret to Carrot Cake’s Amazing Flavor

One of the reasons carrot cake is so good (and why these truffles work so well) is because it’s made with oil instead of butter.

This makes it super moist and flavorful. When I want a healthier alternative, I always reach for coconut oil—it’s easy to mix in, adds a light sweetness, and is packed with good fats.

Plus, it’s completely vegan, so it works for everyone!

INGREDIENTS

  • ½ Cup Unsalted Butter
  • ½ Cup Brown Sugar
  • 1 whole Egg
  • ½ Teaspoon Vanilla essence
  • ½ Cup Carrots Grated
  • 1 Cup All-Purpose Flour
  • ½ Teaspoon Baking Soda
  • ½ Teaspoon Baking Powder
  • ½ Teaspoon Ground Cinnamon
  • ½ Teaspoon Ground Nutmeg
  • ½ Teaspoon Salt
  • 2 Oz Cream Cheese
  • 1 Tablespoon Pineapple Juice
  • ¼ Cup Granulated Sugar
  • ½ Cup White Chocolate melted
  • 1 Bag Orange Candy Melts
  • ⅐ Cup Walnuts

INSTRUCTIONS

  • First cream unsalted butter, sugar until light and fluffy. Add egg and vanilla essence. Beat well.
  • Sift flour, baking soda, baking powder, ground cinnamon, ground nutmeg and a pinch of salt in the batter.
  • Add grated carrot and mix well. Transfer this into a well-greased and lined cake pan. Bake for 10-12 minutes or until a toothpick inserted at the center comes out clean.
  • In the meantime make the cream cheese frosting. Fo that mix cream cheese, pineapple juice, and granulated sugar. Beat at high speed until even, smooth and creamy. Scrape the sides.
  • When the cake is baked, allow it to sit at room temperature for about 5-10 minutes. Then slather the cream cheese frosting all over the cake.
  • Now crumble the cake and make small balls taking the help of cream cheese frosting, in case it is getting too dry. Your cake balls should not be too wet as well. Keep it in the fridge for an hour or two.
  • In the meantime, melt white chocolate and some butter over a non-stick pan or in a microwave oven. If you are using a microwave oven then keep stirring at every 30-second interval.
  • Coat your cake balls in white chocolate. And let them sit in the fridge for a while. Melt orange candy melts and put it in a piping bag or use a spoon to drizzle it all over the truffles. You can add some pecans or walnuts or almonds at this point in time. Then, Enjoy!
