Blackened Shrimp Taco is a quick and easy Taco recipe for dinner where shrimps are coated in spices and seared until they cook and then it is served in tortillas with fresh coleslaw and salsa.

INSTRUCTIONS
Marinate Shrimps - In a ziplock bag add shrimps along with the spices, herbs, and olive oil. Shake the bag vigorously until shrimps are evenly coated in the spices. You can also layout your shrimps on a shallow plate and coat them with olive oil, herbs, and spices. Refrigerate for 20-minutes.
Blacken Shrimps - Preheat a non-stick skillet over high heat. Add olive oil and once the oil gets hot, add shrimps in a single layer. Do not overcrowd the pan. Cook on medium-high for 2-3 minutes per side. Flip over and cook the other side as well. Cook until the shrimps begin to curl up and are opaque white with few light pink spots around the edges. Sauté garlic - Once done, add minced cloves of garlic and sauté for just 30-seconds. Once done, you can serve it in the form of taco or as a burrito or with rice or pasta.
Make Coleslaw - In a medium-sized mixing bowl combine the ingredients for coleslaw. Mix lightly and stick it in the refrigerator until ready to assemble.
Making Chipotle Mayo - Combine the ingredients for Chipotle mayo in a small bowl and keep it aside. You can also make Pineapple salsa or Mango Salsa or Roasted Tomato Salsa alternatively. (See notes for recipe)
Toasting Tortillas 0 In a dry pan toast corn or flour tortillas until crispy on both sides. Keep aside.
Assembling Blackened Shrimp Tacos - First, apply guacamole on the base of tortillas. Then add fresh coleslaw. Follow it with blackened shrimps and finally garnish with salsa or chipotle mayo along with cotija cheese and lime wedges. Enjoy right away.
