To marinate the Chicken 🍗
- Chicken Breasts boneless, skinless
- Salt & Pepper
- Garlic Powder
For the Corn & Black Bean Mixture 🥫
- Diced Tomatoes
- Red Enchilada Sauce
- Chipotle Chili in adobo sauce chopped finely
- Black beans drained and rinsed
- Corn fresh off the cob or sweet corn
- Sour Cream
- Garlic Powder
- Onion Powder
- Cayenne Pepper
- Ground Cumin
- Salt & Pepper
- Mexican Cheese Blend To top the Casserole
- Freshly chopped Parsley FOR GARNISH

👩🍳Instructions
Here's how to make Baked Southwestern Chicken Casserole from scratch.
STEP 1: Marinate the Chicken
- Marinate the Chicken breast pieces with Salt, Pepper and Garlic Powder.
STEP 2: Make the Corn mixture
- Combine all the ingredients - Diced Tomatoes, Enchilada Sauce, Onion Powder, Garlic Powder, Cayenne Pepper, Ground Cumin, Chipotle Chilis in Adobo Sauce, Black Beans, Corn, Sour Cream, Salt and Pepper.
STEP 3: Bake
- Place the marinated Chicken pieces in a greased 9x9 inch baking dish
- Pour the Corn mixture over the Chicken pieces
- Even it out using the back of a spoon.
- Bake in a 400F or 200C preheated oven for 15 minutes.
STEP 4: Add Cheese
- Add shredded Mexican Cheese Blend over the baked Chicken
- Put it back in the oven and bake @200C or 400F for 10 minutes
STEP 5: Garnish and Serve
- Garnish with freshly chopped Parsley and serve immediately.
📝Variations
- Spicy - This Casserole is a combinatin of cheesy and spicy flavors. If you like it spicier, then you might want to add some smoked Paprika or hot sauce in the corn mixture.
- Chipotle Chilis - The authentic recipe calls for Green Chiles. However, since I had none so I had to replace it with spicy Chipotle Chilis. You can use either of them. Its just for the heat.
- Corn - I have used fresh corn off the cob. You can use frozen, defrosted Sweet Corn as well.
- Mexican Cheese Blend - I use Sargento Mexican Cheese Blend for this recipe. You can easily find it in the frozen section of your store beside Cheddar Cheese. If you're to replace it then you can use Monterey Jack or Cheddar Cheese.
🧊Storage
This Southwestern Chicken Casserole can easily be made and frozen for over a week. You need to make this and then cool it down completely. Cover with a plastic wrap and then again with aluminum foil to prevent any cold air from entering the dish. Wrap it up tightly, label it and freeze for about 3 months. You can refrigerate it for a week.
You need to thaw it overnight in the refrigerator and reheat it in the oven before serving. Freeze individual portions so that it's easy to serve.

- Chicken cuts- I have used Boneless Chicken Breasts for this recipe as they cook quickly and are a perfect choice for making a Casserole. You can use Boneless Chicken Thighs or Shredded Rotisserie Chicken as well.
- Leftover liquid - It is very common to have lots of leftover liquid after this casserole gets baked. You can either use it to serve over rice or drain it carefully just after cooking.

- 1 lbs Chicken Breasts boneless, skinless

- 1 teaspoon Garlic Powder

- 1 cup Red Enchilada Sauce
- 1 whole Chipotle Chili in adobo sauce chopped finely
- ¼ cup Black beans drained and rinsed
- ¼ cup Corn fresh off the cob or sweet corn
- ½ cup Sour Cream
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- 1 teaspoon Cayenne Pepper
- 1 teaspoon Ground Cumin
- 1 teaspoon Salt & Pepper
- 1 cup Mexican Cheese Blend To top the Casserole
- Freshly chopped Parsley FOR GARNISH
INSTRUCTIONS
- Marinate the Chicken breast pieces with salt, pepper, and garlic powder. Preheat the oven to 400F or 200C.
- In a large mixing bowl, combine all the ingredients except for the Mexican Cheese blend. Give it all a good mix and toss to combine everything.
- Place the marinated chicken breasts in a greased 9x9 inch baking dish. Pour the Corn and Black Bean mixture over the Chicken. Even it out using the back of a spoon. Bake in a 400F or 200C preheated oven for 15-minutes.
- After the casserole gets baked, top with Mexican cheese blend and place it back in the oven @400F or 200C for 10-minutes.
- After the Southwestern Chicken bake gets ready, get it out of the oven. Garnish with some freshly chopped Parsley and serve immediately.
