- 1 lb ground beef
- 1 yellow onion, diced
- 3 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon smoked paprika
- 13 oz kielbasa sausage, sliced into rounds
- 2 medium russet potatoes, peeled and diced
- 1 can (15 oz) pinto or kidney beans, rinsed and drained
- 1 can (15 oz) sweet corn, drained
- 1 can (14.5 oz) diced tomatoes (with juices)
- 1 can (10 oz) diced tomatoes with green chilies
- 4 cups beef broth
- Salt and black pepper, to taste
Instructions
Step 1: Cook the Ground Beef with Onion, Garlic and Ground Spices

- Heat a skillet over medium-high heat.
- Add the ground beef and diced onion, cooking until the beef is browned and the onions are translucent.
- Stir in the minced garlic, chili powder, and smoked paprika, tossing everything together until completely combined and fragrant.
- Transfer the seasoned beef mixture into a greased crockpot.
Step 2: Slow Cook & Serve
- To the crockpot, add the sliced kielbasa, diced potatoes, beans, and corn.
- Pour in the canned diced tomatoes (with their juices) and beef broth.
- Stir all the ingredients together until well blended.
- Cover with the lid and cook on LOW for 6 hours or on HIGH for 3 to 4 hours, until the potatoes are fork-tender.

INGREDIENTS
- 1 lbs ground beef
- 1 medium sized yellow onion diced
- 4 cloves garlic minced
- 1 tablespoon chili powder
- 1 teaspoon smoked paprika
- 13 oz kielbasa sausage sliced into 1/2-inch rounds
- 2 medium sized russet potatoes peeled and cut into bite-sized cubes
- 1 can kidney or pinto beans rinsed and drained
- 1 can sweet corn 15oz, drained
- 1 can diced tomatoes with juices
- 4 cups beef broth
- Salt and freshly cracked black pepper to taste
INSTRUCTIONS
- Place a skillet over medium-high heat. Add the ground beef and diced onion. Cook for 5–7 minutes, breaking up the meat with a spoon, until the beef is fully browned and the onions are soft.Stir in the minced garlic, chili powder, and smoked paprika. Toss everything together for about 1 minute until fragrant.Transfer the meat mixture into a greased slow cooker.
- Add the sliced kielbasa, diced potatoes, drained beans, and drained corn to the slow cooker.Pour in both cans of diced tomatoes (with juices) and the beef broth. Stir well to combine all ingredients.Cover and cook on LOW for 6 hours (or HIGH for 3 to 4 hours) until the potatoes are fork-tender.
