So, the summers are finally here and I'm in no mood to make Lunch! Today, I made this salad for lunch, and can you believe even my kids approved it! Yeah! it's that good. Thank God for inventing Chickpeas, which is such a healthy ingredient and an instant filler. This means you will have happy kids at home even if you are making a salad.
During Summers, I hate going to the kitchen. It gets so hot and stuffy there. So, I like to dwell on Salads. Thankfully I am able to get my hands on some fresh produce which is always helpful in mixing up a bowl of Salad.
Chickpea Salad is made with fresh veggies such as Red Onions, Bell Peppers, Tomatoes, Cucumber, and of course some Freshly Chopped Cilantro!
The fish sauce is the main ingredient in this recipe. It gives that sweet and spicy flavor to this healthy Chickpea Salad also brings out the flavor of the veggies. It's really so yummy! Fish Sauce gives that Asian or precisely Thai Curry flavor to this recipe which is so so so good!

The steps for making healthy chickpea salad
First, chop your veggies and keep aside. Also, we will be using cooked Chickpeas for this recipe. You can cook your Chickpeas in the Instant pot for 5 minutes and they will be ready. If you do not have an instant pot, then just soak these Chickpeas in hot boiling water with some Baking soda for an hour and they will be ready for use!

Next is the Dressing. The dressing is literally the heart of this salad and without it, it shall be no good. You can make the dressing by using some Fish Sauce with some Olive Oil, Garlic, Honey, Lime Juice, Salt, and Pepper. If you want you can also throw in some Red Chili Flakes or Green Chilis or Chopped Jalapenos. These work amazingly well with this dressing.
Finally in a mixing bowl add the Chickpeas, followed by the Cucumber, Bell Pepper, Red Onion, Tomato, and top with some freshly chopped Cilantro.
Pour the Fish Sauce and honey dressing on top and mix your salad well with two spoons. Season with some more salt and freshly ground pepper if you desire and serve!

I know. This is the most important bit! On a scale of 1-10, I rate this salad 10 in terms of healthy and 10 in terms of taste. It's filled with fresh veggies and Chickpeas which is packed with proteins and goodness and is so good. Also, the taste is so good. Fish sauce is really amazing because it brings ina wonderful spice to this salad. Also, the Honey and Garlic are two perfect twins which makes everything good.
This is one of the healthiest summer salad recipes. If you are allergic to Fish sauce or cannot tolerate the smell of Fish Sauce, then you can use Dark Soy Sauce in its place. Although it won't smell the same the taste will somewhat be similar.
Healthy Chickpea Salad with Honey - Fish Sauce Dressing
Fish Sauce Dressing
- 2 tablespoon Olive Oil
- 1 tablespoon Lime Juice
- 1 tablespoon Fish Sauce
- 5-6 Chopped Garlic Cloves
- 2 tablespoon Honey
- 1 teaspoon Salt
- 1 teaspoon Black Pepper Powder
- 1 Cup Boiled Chickpeas
- ¼ Cup Bell Pepper chopped
- ¼ Cup Cucumber chopped
- ¼ Cup Tomatoes chopped
- ¼ Cup Red Onions chopped
- ¼ Cup Cilantro chopped
- In a mixing bowl mix all the dressing ingredients and make the dressing for your Salad
- In a separate mixing bowl add all the veggies along with the dressing and mix it well using two spoons. Season with salt and freshly grounded black pepper if desired and serve!
- If you do not have fish sauce, mix soy sauce with white wine vinegar and use it in place of Fish Sauce
- You can add some celery if you wish to. It tastes great with this salad.
