Hashbrown Breakfast Casserole is an easy make ahead Breakfast casserole recipe. This is super easy to make. Its made using Hash Browns, Eggs, Veggies, Sausage (or ham) and topped with loads of Cheddar Cheese.

Hashbrown Breakfast Casserole makes for a perfect Breakfast recipe. Made with Eggs, Hashbrowns and Breakfast Sausages, this one is a favorite breakfast recipe. Its also a great recipe for Brunches.

I love to bake this Hashbrown Breakfast Casserole on Sunday Mornings and enjoy it all together, sitting, soaking in the day & chatting our way lazily into the day with the kids.

Also after working hard in the gym for the entire week, this hearty Casserole recipe, feels like a perfect way to start fresh! Also, I need my Carbs after a week of heavy workout, and this feels so perfect.

This hearty breakfast casserole is a quick and easy make ahead breakfast recipe. I love the fact that this can be made ahead of time.

Also it uses all of our favorite Breakfast ingredients like Eggs, Hash Browns, Sausages (or ham) and loads of Cheddar Cheese.

You will love this Eggy- and Cheesy Breakfast casserole to enjoy with the family on a lazy Saturday morning or even for Easter Brunch.

Ingredients

  • Shredded Hash Browns (thawed)
  • sausage (cooked, crumbled)
  • Bell Peppers (any color)
  • Eggs
  • Onion & Garlic (finely chopped)
  • Italian Seasoning
  • Cheddar Cheese (shredded)
  • Evaporated Milk

How to make Hashbrown Breakfast Casserole

  • Spread the thawed Hashbrowns in a single layer at the bottom of the casserole dish.
  • Add the meat of your choice, chopped veggies (onions & bell peppers) and shredded Cheddar Cheese over it.
  • Combine Eggs, Milk, minced Garlic, Evaporated Milk, Italian Seasoning, Salt and Pepper in a mixing jar. Whisk until combined.
  • Pour this egg mixture on top.
  • Bake @350°F for 50-60 min.
  • Cut into squares and serve.

Hint: This Breakfast Casserole is the easiest. Unlike a traditional French Toast Casserole, this one requires no resting time. You simply assemble everything, pour the egg mixture on top and Bake! Its that easy!!

Vegetarian Breakfast Casserole

If you're vegetarian, don't worry. this recipe is easily adaptable for any diet. Simply Roast Veggies of your choice in a sheet pan. Layer them in a baking dish. Top with Egg and Milk mixture and remaining veggies and simply Bake!

In the Vegetarian Breakfast Casserole you can add as many colorful Veggies you wish to. Its such a healthy way to use up leftover veggies. This tastes almost like a fluffy crust less Quiche in a casserole dish!

Cooking Variations

These are some possible Variation which you can easily do to make this Hashbrown Breakfast Casserole.

  • Add more Veggies of your choice - I have used Yellow onions & Bell Peppers. Besides this you can also use Sweet Potatoes, Broccoli, Cauliflower or Button Mushrooms. Remember to chop the Veggies finely & roast them in a sheet pan in the oven for 10 min, before you add them to the casserole so that they blend well and bake perfectly in the casserole.
  • Meat of your choice: You can add any meat of your choice. Be it cooked or Uncooked. You can use Smoked Sausages or Ground Beef, Ground Turkey or Ground Chicken. Both leftover cooked meat as well as uncooked meat works fine here!
  • Replace Hashbrowns: You can replace Hashbrowns with Breakfast Potatoes or leftover Fries or some homemade Potato Fries.

How to store leftover Breakfast Casserole?

You can store leftovers of this Breakfast Casserole in the refrigerator for 3-4 days.

Or you can store leftover Breakfast Casserole in the freezer. Wrap individual pieces in the freezer.

Thaw overnight in the refrigerator and reheat in the oven before serving.

Make Ahead Breakfast Casserole

You can make this Hashbrown Breakfast Casserole ahead of time. Simply assemble everything in a casserole dish. Wrap it tightly with foil and plastic wrap and refrigerate overnight.

You can simply remove the wrap and bake in the morning!

You can refrigerate the unbaked casserole for at least 48 hours. However, remember to keep it out at room temperature at least 30 min before baking.

Do you thaw Hashbrowns for Casserole?

Yes you need to thaw Frozen Hashbrowns on the counter for 2 hours or overnight in the refrigerator for making this Hashbrown Breakfast Casserole.

What do you eat with Hash Brown Casserole?

You can serve this for Breakfast with fresh fruits and coffee. Its such a perfect recipe for Breakfast.

Can I use fresh Potatoes instead of frozen Hash Browns?

Yes of course. Use a slicer to shred the potatoes and put them in a bowl full of ice cold water. Soak for 5-10 minutes and then use it. Soaking Shredded Potatoes will get rid of the starch from them. Now, pat them dry using a kitchen towel and use them.

INGREDIENTS

  • 20 oz Shredded Hash Browns thawed
  • 1 lbs Sausage cooked, crumbled, drained
  • 1 teaspoon Italian Seasoning
  • 1 teaspoon Salt & Pepper to taste
  • 1 medium sized onion finely chopped
  • 3 cloves Garlic minced
  • ½ medium sized Red Bell Pepper finely chopped
  • ½ medium sized Green Bell Pepper finely chopped
  • 1 can Evaporated Milk ⅔ cup
  • 8 large Eggs
  • 1 cup Cheddar Cheese shredded

INSTRUCTIONS

  • Preheat the oven to 350F
  • Heat a skillet over medium high heat. Add the sausages. Crumble and cook the sausages until browned for 2-3 minutes. Drain and set aside.
  • Combine Eggs, Evaporated Milk, Italian Seasoning, miced Garlic, salt and pepper in a mixing jar. Whisk and set aside.
  • Spread the thawed Hashbrowns in a single layer in the baking dish.
  • Add the cooked sausages, chopped veggies (onions & bell peppers) and half of the cheddar cheese over it.
  • Pour the egg mixture on top. Top with leftover shredded Cheddar Cheese. Bake uncovered for 50 min.
  • Cut into squares and serve.
