Butter Chicken Curry reserves a special place in every Indian's heart. It would be even better if we can make healthy butter chicken.
Most people call Butter Chicken "unhealthy" because probably the term "butter" freaks them out.
But I've tried something new. Something unique. Something out of the box.
I've made Low carb Keto Butter Chicken. That's got zero trans fat. Full of protein and good fat. You've got to try: Crispy thigh sweet chili chicken - bursting with Asian flavors.
I know the authentics will be freaked out when they see butter chicken cooked in such a fashion.
But it works for me. Works like a charm.
I'm on a low-carb, high-protein diet most of the time. And just boiled chicken breast feels extremely monotonous.
So, to spice things up, I cooked up this easy peasy low carb keto butter chicken recipe and it never fails to put a smile on my face.
At least, the Indian in me is satisfied. I'm a Virgo, and you know how critical I can be. 😉

Ingredients
Marinade
- boneless skinless chicken breast cut into bite-sized cubes
- red chili powder
- ground cumin
- ground coriander
- turmeric
- salt
- ginger garlic paste (or 1 and 1/2 tablespoons of grated ginger and 2 tablespoons of minced garlic)
Sauce
- Grass Fed Butter (can replace with 3 tablespoons of ghee and 2 tablespoon of olive oil)
- onions
- tomato puree
- greek yogurt or plain yogurt
- garam masala
garnish
- chopped cilantro
Instructions

- STEP 1: Marinade chicken - Marinade chicken breasts cut into small cubes with red chili powder, ground cumin, turmeric powder, salt, and ginger garlic paste.
- Stick it in the refrigerator for about 1 hour or overnight (if you have time)
- STEP 2: Heat butter in a large skillet over medium-high heat to make the sauce.
- STEP 3: Add thinly sliced onions and sauté until the onions are translucent.
- STEP 4: Add tomato puree, yogurt, and garam masala. Cook until it's fragrant and aromatic. Transfer to a food processor or Ninja foodi and make a puree.
- STEP 5: Return the sauce to the same pan over medium-high heat. Add the marinated chicken to the sauce. Stir. Cover with a lid and cook for 10-15 minutes on medium-low heat until the chicken is fully cooked.
Serve with fresh chopped cilantro (coriander) or Kasuri methi (dried fenugreek leaves) if you want.

I personally like Grass-Fed or Irish butter. Sometimes it's also called Pastured butter. It's a little expensive. But the old saying "you only get what you pay for" fits snugly here.

Low Carb Keto Best Butter Chicken Curry
INGREDIENTS
Marinade
- 2 lb boneless skinless chicken breasts cut into bite size cubes
- ½ teaspoon red chili powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 2 teaspoons garlic minced
- 1½ teaspoon ginger grated or minced
- ½ teaspoon turmeric
- ½ teaspoon salt or as per taste
Sauce
- ¼ cup unsalted butter grass-fed or Irish butter
- ½ large onion
- ¾ cup plain yogurt or greek yogurt
- 2 tablespoons garam masala
- 1 29-oz can tomato puree
Garnish (optional)
- ½ cup cilantro chopped (fresh)
INSTRUCTIONS
- Place chicken in a large bowl. Add all the ingredients for the marinade. Use your hands or a spatula to coat the chicken with the marinade. Tightly cover with plastic wrap. Stick it in the refrigerator for 1 hour or overnight (if you have time). (The longer it stays in the refrigerator, the better)
- Melt butter in a medium-sized skillet over medium-high heat. As the butter melts, add thinly sliced onions and cook for until they turn translucent.
- Add tomato puree, garam masala, and yogurt. Stir well until fragrant.
- Remove from the sauce from the skillet and transfer it to a food processor or Ninja foodi. Blend until the sauce looks silky smooth, and velvety.
- Return the sauce to the skillet. Add marinated chicken and toss well to coat the chicken with the sauce.
- Cover with a lid and cook on low heat for , stirring every few minutes until the chicken is fully cooked and the sauce is thickened.
- Garnish with fresh chopped cilantro. Adjust salt to taste if needed.
