Low Carb Keto Best Butter Chicken Curry

This healthy low-carb Indian butter chicken curry is supremely healthy. It's an Ideal choice for a person who is on a keto or low-carb high protein diet.

This is the best Butter chicken curry you'll ever have. Being an Indian and especially from the capital - "Delhi" - I know what's meant by best butter chicken or Authentic Murg Makhani. 😍

In India, Butter chicken is a comfort food. It's what moms cook when kids are upset. It's what couples order when they've fought. It's what we make when we are clueless but desperately want to impress our guests. 😉

Butter Chicken Curry is rich, creamy, smooth, velvety, sweet, and lightly spicy with a hint of tang.

Healthy Version of Indian Butter Chicken

Butter Chicken Curry reserves a special place in every Indian's heart. It would be even better if we can make healthy butter chicken.

Most people call Butter Chicken "unhealthy" because probably the term "butter" freaks them out.

But I've tried something new. Something unique. Something out of the box.

I've made Low carb Keto Butter Chicken. That's got zero trans fat. Full of protein and good fat. You've got to try: Crispy thigh sweet chili chicken - bursting with Asian flavors.

I know the authentics will be freaked out when they see butter chicken cooked in such a fashion.

But it works for me. Works like a charm.

I'm on a low-carb, high-protein diet most of the time. And just boiled chicken breast feels extremely monotonous.

So, to spice things up, I cooked up this easy peasy low carb keto butter chicken recipe and it never fails to put a smile on my face.

At least, the Indian in me is satisfied. I'm a Virgo, and you know how critical I can be. 😉

Ingredients

Marinade

  • boneless skinless chicken breast cut into bite-sized cubes
  • red chili powder
  • ground cumin
  • ground coriander
  • turmeric
  • salt
  • ginger garlic paste (or 1 and 1/2 tablespoons of grated ginger and 2 tablespoons of minced garlic)

Sauce

  • Grass Fed Butter (can replace with 3 tablespoons of ghee and 2 tablespoon of olive oil)
  • onions
  • tomato puree
  • greek yogurt or plain yogurt
  • garam masala

garnish

  • chopped cilantro

Instructions

  • STEP 1: Marinade chicken - Marinade chicken breasts cut into small cubes with red chili powder, ground cumin, turmeric powder, salt, and ginger garlic paste.
  • Stick it in the refrigerator for about 1 hour or overnight (if you have time)
  • STEP 2: Heat butter in a large skillet over medium-high heat to make the sauce.
  • STEP 3: Add thinly sliced onions and sauté until the onions are translucent.
  • STEP 4: Add tomato puree, yogurt, and garam masala. Cook until it's fragrant and aromatic. Transfer to a food processor or Ninja foodi and make a puree.
  • STEP 5: Return the sauce to the same pan over medium-high heat. Add the marinated chicken to the sauce. Stir. Cover with a lid and cook for 10-15 minutes on medium-low heat until the chicken is fully cooked.

Serve with fresh chopped cilantro (coriander) or Kasuri methi (dried fenugreek leaves) if you want.

Which Butter should I use?

I personally like Grass-Fed or Irish butter. Sometimes it's also called Pastured butter. It's a little expensive. But the old saying "you only get what you pay for" fits snugly here.
I love to use it for recipes like Baked Garlic Butter Chicken Breasts or Crockpot Chicken Thighs with Garlic Parmesan

is butter chicken low carb?

Butter chicken can be low-carb because it's made using chicken breast, which is high in protein. But the Authentic Butter Chicken recipe is sweet. And that adds a lot of calories.
Moreover, most people use regular butter, which makes it even more unhealthy.

is butter chicken keto?

Can you eat butter chicken on a keto diet? A keto diet calls for High fat and low carb. Butter chicken, especially the one which you'll be making now, smoothly secures a place on the list. This butter chicken recipe is keto and low carb meaning it's ideal for a person who's on a keto diet.

Can I use Chicken Thighs?

You can if you don't mind some extra calories... But I'd stick to lean chicken breast. However, with boneless skinless chicken thighs, I'd suggest you make Cajun butter crockpot chicken thighs and rice.

INGREDIENTS

Marinade

  • 2 lb boneless skinless chicken breasts cut into bite size cubes
  • ½ teaspoon red chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 2 teaspoons garlic minced
  • 1½ teaspoon ginger grated or minced
  • ½ teaspoon turmeric
  • ½ teaspoon salt or as per taste

Sauce

  • ¼ cup unsalted butter grass-fed or Irish butter
  • ½ large onion
  • ¾ cup plain yogurt or greek yogurt
  • 2 tablespoons garam masala
  • 1 29-oz can tomato puree

Garnish (optional)

  • ½ cup cilantro chopped (fresh)

INSTRUCTIONS

  • Place chicken in a large bowl. Add all the ingredients for the marinade. Use your hands or a spatula to coat the chicken with the marinade. Tightly cover with plastic wrap. Stick it in the refrigerator for 1 hour or overnight (if you have time). (The longer it stays in the refrigerator, the better)
  • Melt butter in a medium-sized skillet over medium-high heat. As the butter melts, add thinly sliced onions and cook for until they turn translucent.
  • Add tomato puree, garam masala, and yogurt. Stir well until fragrant.
  • Remove from the sauce from the skillet and transfer it to a food processor or Ninja foodi. Blend until the sauce looks silky smooth, and velvety.
  • Return the sauce to the skillet. Add marinated chicken and toss well to coat the chicken with the sauce.
  • Cover with a lid and cook on low heat for , stirring every few minutes until the chicken is fully cooked and the sauce is thickened.
  • Garnish with fresh chopped cilantro. Adjust salt to taste if needed.
