Preheat the oven to 425F and grease a glass baking dish with cooking spray.
Add the chopped Cauliflower florets in the baking dish. Top with salt and pepper. Drizzle olive oil on top. Toss to combine. Roast for 20-25 min or until golden brown.
Add the Marinara Sauce, Pizza sauce, and Cubed Cream Cheese over it. Toss to combine through. Top with shredded Mozzarella Cheese. Top with twelve Pepperoni slices. Combine the shredded Parmesan cheese with Italian Seasoning and sprinkle on top of the Casserole. Bake in the same oven for 10 min or until the cheese gets golden on top.
Cut using a Pizza cutter and serve.
