- Cream Cheese

How to make Low Carb Pizza Casserole
Here is a step by step direction on how to make Low Carb Pizza Casserole.
STEP 1: ROAST THE CAULIFLOWER
- Preheat the oven to 425F
- Cut the Cauliflower into small florets
- Throw them in a greased 9x13" baking dish
- Toss with Olive oil, Salt and Pepper. Arrange in a single layer.
- Roast for 25-30 min or until they get golden brown.
STEP 2: ADD THE TOPPINGS
- Top the roasted Cauliflower with Marinara sauce, Pizza Sauce, Italian seasoning, cream cheese, veggies of your choice (if using).
- Sprinkle with shredded Mozzarella Cheese on top
- Top with Pepperoni slices
- Place the dish back in the oven and bake for 10 min.
- Bake until the top gets golden brown.
- Cut using a Pizza cutter. Serve hot.

HINT
If you're using veggies like Mushrooms, Onions, Bell Peppers or Zucchini, you might want to cook them in a skillet until soften and then dump and bake as a casserole.
For more flavors, combine Parmesan cheese with Italian Seasoning & sprinkle on the top.
Substitutions
- Broccoli - instead of Cauliflower you can use Broccoli florets.
- Veggies of your choice - include healthy veggies like Mushrooms, Bell Peppers, Zucchini & Yellow Squash. (lightly cook them in a skillet over low heat for 5 min and then dump in the casserole dish)
- Vegetarian - to make Vegetarian version, skip Pepperoni slices and top with Roasted Red Peppers, Black Olives and Bell Peppers.
Storage
Refrigerate - Store the leftover Pizza casserole in an airtight container. You can refrigerate this for up to a week.
Freeze - You can even freeze leftover Pizza Casserole. Tightly wrap the leftover casserole using a plastic wrap and freeze. You can freeze this for up to 3 months.
Reheat - thaw overnight in the refrigerator, reheat in the oven at full powder for 5-7 min or until heated through and serve.
Top tips to make the best Keto Low Carb Pizza Casserole
- You must properly roast the Cauliflower before adding the topping and cheese
- You can add any veggies of your choice - especially Tomatoes, Onions, Bell Peppers, Mushrooms and Zucchini makes for a tasty addition
- If you're adding veggies, cook them first and then dump in the casserole dish
- To cook the veggies, simply heat a non-stick skillet over low heat and add the chopped veggies. Cover cook for 5-10 min and you're done.
- You can alternatively roast the Mushrooms, Onions and Zucchini along with the Cauliflower
- Do not roast Bell Pepper as they soften very quickly. Just add them to the topping.

Low Carb Pizza Casserole
INGREDIENTS
- 1 large Cauliflower head cut into florets
- 1 tablespoon Olive Oil
- Salt & Black Pepper
- 1 cup Marinara Sauce
- 4 oz Cream Cheese cut into small cubes
- ¼ cup Pizza Sauce optional
- 3 cup Shredded Mozzarella Cheese
- 2 oz Pepperoni slices for topping
- 2 teaspoon Italian Seasoning
- 2 tablespoon Parmesan cheese
- 1 tablespoon Keto Ketchup to serve (optional)
INSTRUCTIONS
- Preheat the oven to 425F and grease a glass baking dish with cooking spray.
- Add the chopped Cauliflower florets in the baking dish. Top with salt and pepper. Drizzle olive oil on top. Toss to combine. Roast for 20-25 min or until golden brown.
- Add the Marinara Sauce, Pizza sauce, and Cubed Cream Cheese over it. Toss to combine through. Top with shredded Mozzarella Cheese. Top with twelve Pepperoni slices. Combine the shredded Parmesan cheese with Italian Seasoning and sprinkle on top of the Casserole. Bake in the same oven for 10 min or until the cheese gets golden on top.
- Cut using a Pizza cutter and serve.
