January is the time when I crave something simple, comforting, and very filling. After the holiday cooking and baking, as well as the hearty meals, nothing complicated is needed. Something easy that is comforting and simply takes care of dinner is needed instead.

That is what Texas Cowboy Stew is all about. πŸ˜‹πŸ˜‹

I regularly cook this stew after I get from work in the evening. I get home exhausted, and I do not feel like cooking dinner, but I want something homemade nonetheless.

It is easy to do with the slow cooker, and I get to eat a whole potful of homemade stew that tastes like real food to me. This stew is warm, thick, and has great taste but is not complicated to prepare in any way at all πŸ˜‹πŸ˜‹

Texas cowboy stew is the type of food that exudes strength and simplicity. The recipe is comprised of not-so-finicky foods that are mixed together in a full-flavor dish. The beef, sausage, potatoes, beans, corns, tomatoes, and seasoning all mix well together in the stew. The dish is ideal during the cold weather of the winters.

It also makes a fantastic dish following holidays.

Why Texas Cowboy Stew Is Perfect for January

January cooking, for me, is about comfort and ease. I don’t want to spend hours in the kitchen after work. I also don’t want food that feels too heavy. This stew sits right in the middle.

Texas cowboy stew is also very forgiving. There is no exact timing or strict steps. As long as it cooks long enough for the potatoes to get soft, it turns out good.

Ingredients and Why I Use Them

Below is the ingredient list I use for my Texas cowboy stew. Each one has a purpose and adds something important to the dish.

  • Ground beef - I use ground beef because it makes the stew filling and gives it a rich base flavor.
  • Kielbasa - Kielbasa adds a smoky taste that makes the stew deeper and more flavorful.

  • Salt and black pepper - These help bring out the flavor of all the ingredients.
  • Sharp cheddar cheese - Cheddar cheese melts on top and adds a creamy, comforting finish.

How I Make Texas Cowboy Stew in the Slow Cooker

This stew is very easy to put together, which is why I make it so often.

Step 1: Cook the Ground Beef

I start by cooking the ground beef in a pan on the stove. I cook it over medium high heat using olive oil, I break it up and cook it until it is no longer pink. I drain off the extra grease so the stew does not become oily.

This step adds more flavor than putting raw meat straight into the slow cooker. Next I also add the chopped Onions and Sausages into the same saucepan and saute for 3-4 min until they turn golden brown in color.

Step 2: Prepare the Vegetables

I chop the yellow onions and cut the Yukon gold potatoes into small chunks. I try to keep the potato pieces about the same size so they cook evenly.

Step 3: Add Everything to the Slow Cooker

Into the slow cooker, I add the cooked ground beef, sliced kielbasa, potatoes, onions, kidney beans, corn, and diced tomatoes.

Then I add chili powder, salt, black pepper, and hot sauce. I stir everything well so the seasoning spreads through the stew.

Step 4: Let It Cook

I cover the slow cooker and let it cook on low until the potatoes are soft and easy to pierce with a fork. The stew thickens naturally as it cooks.

This is the part I love most. I don’t need to stand near the stove. I just let it cook while I relax or get other things done.

Step 5: Serve

Once the stew is done, I ladle it into bowls and top it with shredded sharp cheddar cheese. The cheese melts right away and makes the stew even more comforting.

How This Version Compares to Original Cowboy Stew

Traditional cowboy stew is made with what people had on hand. It often included meat, beans, potatoes, and tomatoes cooked slowly over a fire or stove.

This Texas cowboy stew keeps that same idea but uses a slow cooker to make it easier for everyday cooking. Instead of large cuts of meat, I use ground beef and kielbasa because they cook well and give great flavor without extra work.

It is still hearty, simple, and filling, just made in a way that fits into modern, busy days.

Substitutions and Alterations

Texas cowboy stew is easy to adjust depending on what you have.

  • You can use different types of sausage if needed
  • To make it spicier you can add diced green chilies, and chopped jalapeno peppers as well.
  • You can change the beans and use drained and rinsed Pinto Beans or Black Beans, if you prefer another kind
  • You can add more or less chili powder depending on taste
  • You can swap the Yukon Gold Potatoes with Russet Potatoes or even Sweet Potatoes for a unique and comforting flavor.
  • You can make it more healthy and hearty by adding more veggies like chopped carrots, celery, green beans. Pro tip - Frozen veggies works like a charm.

Even with small changes, the stew still turns out good because the base flavors are strong.

Storage and Reheating

This stew stores very well.

You can keep it in the refrigerator for several days in a closed container. It reheats nicely on the stove or in the microwave. The flavors stay strong, and the stew stays thick and comforting.

It is also easy to freeze if you want to save it for later. I recommend adding fresh cheese when serving again.

Tips From a Southern Kitchen

It was about a year ago that I happened to visit a Southern friends of mine home and she made me learn these few tips which as she claimed - a true Texan Cowboy recipe, is what makes it so better. I have been following her recipe and its just amazing.

  • Let the stew cook slowly for the best flavor. Slow cooking is the key.
  • Do not rush the potatoes, they need time.
  • A bit of hot sauce makes a huge difference.

INGREDIENTS

  • 1 lbs Ground Beef can use Ground Turkey as well
  • 1 lbs Kielbasa cut into 1/2" coins
  • 1 lbs Yukon Gold Potatoes cut into half
  • 2 15oz cans Diced Tomatoes
  • 2 medium sized Yellow Onions diced
  • 1 15oz can Dark Kidney Beans drained & rinsed
  • 1 15oz can Sweet Corn drained
  • 1Β½ tablespoon Chili Powder
  • 1 teaspoon Salt adjust as per taste
  • Β½ teaspoon Ground Black Pepper
  • 2 teaspoon Hot Sauce to taste
  • 1Β½ cup shredded sharp cheddar cheese for serving

INSTRUCTIONS

  • Heat a pan over medium heat and cook the ground beef until fully browned. Break it up as it cooks. Drain excess grease. Next add the diced onions and Kielbasa and saute for 3-4 min. (if you don't have the time to cook the ground beef before adding it to the crockpot, you can skip it, however I highly recommend, to use extra lean ground beef)
  • Add the cooked ground beef, onions and Kielbasa to the slow cooker. Add kielbasa, potatoes, kidney beans, corn, and diced tomatoes. Sprinkle in chili powder, salt, black pepper, and hot sauce. Stir everything well so the seasoning is evenly mixed.
  • Cover and cook on low for 6 to 8 hours, until the potatoes are soft. Serve hot and top with shredded sharp cheddar cheese.

Notes

to make it more flavorful you can add just 1/2 teaspoon of Ground Cumin and 1/2 teaspoon of Paprika as well. However I dont use them as I like it a little on the comfort side and not too spicy. However you can absolutely use it to make it more authentic and flavorful.Β
