🤔 What is the origin of Corn Pudding

People say that Corn pudding originated from the native American cooking style which created Corn Pone. Corn Pone is basically corn and water cooked together until it gets thick and mushy.

These days, Southerns, have modified the Pone in the form of Cornbread, Corn fritters, Hush Puppies and Corn Pudding.

🤔 Is Corn Pudding a Southern Thing?

Yes, this Corn side dish is most popular in the Southern United States and of course all over the States.

Actually in the south, people make Corn Casserole without the jiffy mix and sugar. Savory Corn Casserole goes perfect with many comforting southern recipes like Crispiest Air Fryer Southern Fried Chicken Recipe with Buttermilk or Southern Louisiana Collard Greens Recipe "Hearty and Meaty" and of course this very hearty and delicious Southern Black Eyed Peas Recipe

Sweet Corn Casserole is actually widely popular in the northern states.

Thick, Cake-y, Sweet and Sour, Corn side dish traces its root, back to the Native American Times, when Fresh Sweet Corn was grated off the cob and was mixed with water and milk to make a thick custard-like Pudding.

When European settlers, came down to America, they adapted this recipe according to their taste and way of cooking.

It was probably the Europeans who thought of adding Eggs, Milk, and Butter for that added richness in our Corn Pudding.

😍 Corn Pudding

A lot of people tell me that this is more of a Corn Pudding and not a Corn Casserole.

Well, technically, Yes! This is just like a Pudding, although I am not using Eggs in this recipe, still, the creamy filling and the Jiffy Mix do give this a pudding-like texture.

But, I think, when I think of pudding, I like to add eggs to the mixture and make the filling a bit more custard-y.

Sweet and Savory Corn Casserole

I like to make my Corn Casserole sweet and savory. That way it works both ways. As a salty side dish as well as a dessert.😍😍

I do not use a lot of sugar, just 1/2 cup of Granulated Sugar, and trust me, sugar makes this Corn Casserole taste so damn good!

Like really Gooood!!!! 😋😋😋😋😋😋

🥘 Ingredients needed to make Corn Casserole

  • Jiffy Corn Muffin mix
  • Sweet Corn
  • Creamed Corn
  • Sour Cream
  • Butter
  • Sugar (optional)

👩‍🍳 How to make Corn Casserole?

STEP 1: COMBINE EVERYTHING

  • Mix all the ingredients in a mixing bowl.

STEP 2: DUMP AND SLOW COOK

  • Dump everything in the slow cooker. Cover and cook over low heat for 4 hours or on high for 2 hours.

STEP 3: SERVE

  • Check the see if the center is cooked.
  • Cut into pieces and serve😍😍

Corn Casserole With Eggs 🥚

If you want, you can add Eggs to the mixture. This will give the mixture a pudding-like texture and the casserole will have a rich custard-like taste to it.

Baked Corn Casserole

You can dump all the ingredients in a greased 8x8 inch casserole baking dish or a 9x13 inches Sheet Pan.

Place it in a 350°F preheated oven and bake for 45-50 minutes or until the center sets.

😍 Cheesy Corn Casserole

Add shredded Cheddar Cheese and Cream Cheese to this Casserole.

Toss to combine and bake in the oven or dump and slow cook.

Also, after this gets baked, add shredded Cheddar or Mozzarella on top and cover cook for 30 minutes or until the cheese melts.

Adding Cream Cheese as well as shredded Cheddar Cheese definitely makes this taste so cheesy and delicious and who doesn't like Cheesy Corn casserole right!

Cheese and Corn are like BFFs! 😍😍😍😍😍🥰🥰

🤔 How to store Corn Casserole?

You can refrigerate this Corn Casserole. Store the leftovers in an air-tight box and refrigerate for up to 2-3 weeks.

🤔 Can you freeze Corn Casserole?

I do not recommend you making this ahead of time and freezing the entire casserole.

You can freeze the unbaked casserole, thaw it overnight in the refrigerator and then bake it.

Remember to keep the unbaked casserole on the counter for 30-minutes in advance before you pop it in the oven.

Also, you can obviously freeze the leftovers. Place them in an airtight box and freeze. These can be frozen for up to 3 months. 😍

🤔 Why is My Corn Pudding Watery?

If your Corn Pudding gets watery in the end, allow it to stay in the slow cooker or oven for a couple of minutes, and then take it out and allow it to rest for 5-7 minutes.

Stir lightly and allow it to sit for few minutes.

This should get rid of most of the moisture if not all.

🥗 Serving Sides

This is a favorite Thanksgiving Side dish in our home. Roasted Chicken, Holiday Ham, Grilled Steaks and etc goes great with this. Also, serve this with vegetarian main dishes like crusty bread or roasted veggies or a quick and simple salad.

Variations of Corn Pudding

  • Bacon & Onions - Crispy Bacon and onions can be sauteed and added to this. It'll add a crunchy element to this dish. Add them on the top right before serving!
  • Jalapenos - Heat up your Corn Pudding with some sliced Jalapenos. Add them with all the other ingredients.
  • Sweet Red Pepper - This Casserole will get an edge when you add some diced Sweet Red Pepper.

INGREDIENTS

  • 8 oz Jiffy Corn Muffin Mix dry packaged
  • 2 cups Sweet Corn or Whole Kernel Corn (drained) (1 can)
  • 15 oz Creamed Corn 1 can
  • ½ cup Sour Cream or thick greek yogurt
  • ½ cup Melted Unsalted Butter 1 stick or 8 tbsp
  • ¼ cup Granulated Sugar optional

INSTRUCTIONS

  • Combine all the ingredients in a large mixing bowl.
  • Dump in a 6-quart Crockpot. Cover and cook over low heat for 4 hours or on High heat for 2 hours.
  • After it gets baked, check to see if the center is baked. If it's still jiggly, cover and cook for another hour on high. Cut into pieces and serve. You can garnish with crispy fried Bacon, chopped green onions, and caramelized onions if you wish to.

Cheesy Corn Casserole

Add shredded Cheddar Cheese and Cream Cheese to this Casserole.
Toss to combine and bake in the oven or dump and slow cook. Also, for cheesy top, after the corn casserole gets baked, add shredded Cheddar Cheese on top. Cover and allow the cheese to melt for about 30 minutes and then serve.

      6 quart crock pot works best for this recipe.

      If you double the recipe, cook for 5 to 6 hours on low. Make sure to stir once after 3 hours.
