The Original Texas Cowboy Stew in slow cooker with Potatoes
Texas Cowboy Stew is a comforting slow cooker meal where ground beef, potatoes, kielbasa, and Beans, are cooked together with southern spices in the slow cooker. This is indeed an easy to make, a simple dump and forget dinner and is full of flavors. Its a perfect comforting meal for the whole family.
Heat a pan over medium heat and cook the ground beef until fully browned. Break it up as it cooks. Drain excess grease. Next add the diced onions and Kielbasa and saute for 3-4 min. (if you don't have the time to cook the ground beef before adding it to the crockpot, you can skip it, however I highly recommend, to use extra lean ground beef)
Add the cooked ground beef, onions and Kielbasa to the slow cooker. Add kielbasa, potatoes, kidney beans, corn, and diced tomatoes. Sprinkle in chili powder, salt, black pepper, and hot sauce. Stir everything well so the seasoning is evenly mixed.
Cover and cook on low for 6 to 8 hours, until the potatoes are soft. Serve hot and top with shredded sharp cheddar cheese.
Notes
to make it more flavorful you can add just 1/2 teaspoon of Ground Cumin and 1/2 teaspoon of Paprika as well. However I dont use them as I like it a little on the comfort side and not too spicy. However you can absolutely use it to make it more authentic and flavorful.
