- Cooked Rice (white or brown) * find instructions for uncooked rice and chicken casserole recipe below.
- Uncooked Chicken
- Unsalted Butter
- Cajun Seasoning
- Tomato Paste
- Minced Garlic
- Mozzarella Cheese
- Cheddar Cheese
- Freshly chopped Cilantro

👩🍳 Cajun Chicken and Rice Casserole Step by Step Recipe
STEP 1: COOK RICE
- Cook Rice as per package directions.
- You can also use leftover rice for this recipe.
STEP 2: DUMP AND BAKE
- Preheat the oven to 350F and grease a 9x9 inch casserole baking dish with oil
- Dump the uncooked Chicken, Rice, Cajun Seasoning, Tomato Paste and butter in the casserole dish.
- Toss to combine everything.
- Top with shredded Mozzarella Cheese and Cheddar Cheese
- Bake @350F for 20 minutes.

🤔 Can I use Uncooked Rice for this recipe?
YES, Ofcourse. However using Uncooked Rice means that you will have to add Chicken Broth or Cream of Chicken Soup so that the Rice gets some moisture to get cooked.
Also, if you're making this recipe with uncooked rice, just dump everything in the casserole dish along with Cream of Chicken Soup.
Toss to combine. Add the Cheese on top
Cover with a foil and bake @350F for 55 min
After than, remove the foil and bake uncovered for 5-7 min
Garnish with freshly chopped Cilantro and Serve.
🤔 Why should you cover and cook Uncooked Rice?
Well, the basic and the most simple reason being, since you're using uncooked rice, so it needs moisture to get cooked and when you cover the casserole dish with a foil, the rice gets cooked to perfection.
Moreover, the Chicken remains soft and moist, without getting dry.
📝 Cream of Chicken Soup Replacements?
Cream of Chicken Soup is not only providing moisture for the rice to get cooked, but its so full of flavors. If you're in a pinch and need a quick replacement, then the next best option for Cream of Chicken Soup Substitute would be Sour Cream.
Sour Cream gives the same moisture and almost same flavor to this Chicken and Rice Casserole.

- Uncooked Rice - You can use Uncooked White or Brown Rice for this recipe. However make sure you follow the separate instructions to make this recipe with uncooked rice mentioned above
- Brown Rice - If you're using Brown Rice, your cooking time will be slightly longer than that of white rice. It should take about 10 minutes longer to cook in the oven
- Sauteed Chicken - If you want, you can melt some butter in a skillet over medium-high heat. Toss the Chicken with Cajun Seasoning. Saute the Chicken until cooked through for 3-4 minutes.
- Andouille Sausage - YES, YES YES, Ofcourse! Cajun Chicken and Rice tastes best with some sauteed Andouille Sausage. If you're using it, saute it along with chicken and veggies and add to the Casserole.
- Veggies - You can saute veggies like Onions, Celery, and Bell Peppers along with the Chicken and then add all of them to the Casserole dish along with the rice
- Turkey or Pork - Besides Chicken you can use Pork or Turkey for this recipe. I think leftover Thanksgiving Turkey could be used perfectly in this recipe. 🧊 Storage
This dish is best made with some leftover rice so if you have some already in the fridge you can use it now
You can dump and prepare all the ingredients in advance and refrigerate this dish for about 2-3 days. Just bake it covered for 55 minutes to 1 hour and then again uncovered for 5 minutes before you serve.
However remember that if you are making this ahead of time, then use uncooked rice. Storing Cooked Rice and Chicken Casserole will turn it soggy and watery and you won't like the taste.

- 1 tablespoon Cajun Seasoning
- 2 sticks Unsalted Butter cubed
- 1 cup Cooked Rice white or brown
- 2 tablespoon Tomato Paste
- 1 cup Mozzarella Cheese shredded
- 2 cups Sharp Cheddar Cheese shredded
INSTRUCTIONS
- Add all the ingredients - Uncooked Chicken, Cooked Rice, Cajun Seasoning, Tomato Paste, and Butter in a Greased Casserole Dish. Toss to combine
- Top with shredded Mozzarella Cheese and Cheddar Cheese. Bake Uncovered for 20 minutes.
