These spooky Halloween ghost cookies are a fun, zero stress treat made by securing a white marshmallow onto a chocolate chip cookie with a thick icing sugar glaze. After pouring more of the bright white glaze over the marshmallow to create a flowing ghost shape and letting it set, you simply use a black food marker to draw expressive eyes and an O shaped mouth. It is an incredibly fast and beginner friendly project that delivers maximum holiday fun with minimal effort.

Halloween is my absolute favorite time of the year to get creative in the kitchen without spending hours on complex baking projects. When I want a fun, festive treat that takes almost no effort, these ghost cookies are my ultimate go to recipe.

  1. Prepare the Glaze: Place the icing sugar in a mixing bowl. Add a very small amount of water to start. Use a hand mixer or a stand mixer with a paddle attachment to whisk the mixture thoroughly until you get a very thick, bright white glaze. If the glaze is too thin, add more icing sugar until it reaches a thick consistency.
  2. Attach the Marshmallows: Dip the bottom half of a white marshmallow into the thick sugar icing. Press the dipped end firmly onto the center of a chocolate chip cookie to secure it in place. Repeat this step for all the cookies.
  3. Drizzle the Glaze: Pour a little bit of the remaining thick icing over the top of each marshmallow so it coats the surface and drips down slightly to form a ghost shape.
  4. Set the Glaze: Place the assembled cookies in the refrigerator and let them set completely until the icing hardens.
  5. Draw the Faces: Take the cookies out of the refrigerator. Once any initial condensation dries completely, use a black food marker to draw two circular eyes and an O shaped mouth on each marshmallow ghost. If condensation persists or if you prefer a different method, you can use the icing to stick mini chocolate chips onto the marshmallow for the eyes and mouth.

Make-Ahead Options
