I just love to make Noodles for dinner. Reminds me of my college days when I used to make Ramen for dinner. They were my very early days and early encounters with cooking! Today when I make noodles, it's not Ramen but still brings back all the nostalgia of those days. Today morning, I woke up and I thought that its July, it's such a hot and sultry day but still somehow, I don't know why I am craving some Asian Noodles, drunken in the sauce. Whenever I think of July, I somehow connect it to me slurping spicy and saucy noodles in a cool AC room watching the day go by, and resting my feet up! And that's how I ended up reaching for my pack of Udon Noodles and got all my favorite Asian Sauces, Sesame Oil, Rice Wine Vinegar out and made this awesome Shrimp Udon Stir Fry.
😋 Let's talk taste
Shrimp Udon Stir Fry has an intense Seafood taste to it due to Shrimps and Oyster Sauce and that's exactly what I love about this Udon stir fry recipe. Also, since Udin noodles tend to hold on to the sauces very well, so they are literally drunken in the sauce made with Oyster Sauce, Soy Sauce, Rice Wine Vinegar, Brown Sugar, Garlic, and Sesame Oil. 🥡 🥢 🤤
I just love the crunch that the veggie provides to this Shrimp Udon Stir Fry. I have used Green Onions, Carrots, and Bell Peppers. You can actually use any veggies you have at home and toss them in Sesame Oil to use in this Shrimp Udon Stir Fry Recipe! It's actually that easy and customizable.
🥘 Ingredients

- Udon Noodles - Udon Noodles are thick Japanese Noodles which I have used for this recipe.
- Toased Sesame Oil - Toasted Sesame Oil has a wonderful nutty aroma which you shpuld use because its healthy and fills your food with all the best Asian flavors.
- Shrimps - Deveined and peeled Shrimps
- Garlic - Garlic forms the base of the sauce. It makes this taste so good.
- Onions - Onions adds to the sweetness of the noodles
- Green Beans, Carrots and Bell Peppers - These are just added to add a vegetable crunch to the noodles
- Oyster Sauce - For that awesome Seafood taste in the Udon Noodles
- Soy Sauce - For that very typical Asian flavor
- Brown Sugar - To sweeten the noodles and balance out the Oyster Sauce and Soy Sauce flavors
- Rice Wine Vinegar - This gives a tartness to the sauce and balances out the sweetness
- Salt & Pepper - To season the Udon noodles
- Green Onions (for garnish) - Crunchy Green Onions to garnish the Shrimp Udon Stir Fry.
👩🍳 Instructions
STEP 1: Cook the Udon Noodles
- Bring a pot of salted water to boil. As the water boils, throw in the Udon Noodles and cook until al dente for about 2-3 minutes. Once the Udon Noodles gets cooked, drain the water and keep the noodles aside.
STEP 2: Cook the Shrimps

- Heat Sesame Oil in a Pan. As the oil shimmers, add the Shrimps and cook for 2-3 minutes until they turn pink. (Donot overcook the Shrimps)
STEP 3: Saute the Veggies
- Add the Veggies and saute over medium-high heat until they tenderize.
STEP 4: Add the Sauces

- Pour the sauces - Oyster Sauce, Soy Sauce, Rice Wine Vinegar along with Brown Sugar, Salt and Pepper. Toss to combine everything.
STEP 5: Add the Noodles

- Add the Noodles and toss to combine everything.
STEP 6: Garnish and Serve
- Garnish with chopped Green Onions and serve immediately.

📝 Variations
- Spicy - You can make this Shrimp Udon Sir Fry spicy by adding Red Pepper Flakes to the sauce or increasing the amount of Cracked black pepper in the seasoning.
- Sweet - You can make it even sweeter by adding some more Brown Sugar or Ketchup
- Veggies - Add veggies of your choice to make this noodle wholesome and filled with proteins. From Bok Choy to Cabbage to Zucchini to Mushrooms to colorful Bell Peppers, your options for veggies are endless.
💯 Top Tips

- Donot over cook the Udon Noodles. Just cook them in salted water for 2-3 minutes until they turn al dente.
- Add veggies if your choice. You can add Bok Choy or Purple Cabbage or Bell Peppers or Mushrooms in this Udon Stir Fry
- If it gets too sweet, then season with some more cracked black pepper and then serve it.
- If you donot have Oyster Sauce, you can replace it with Hoisin Sauce. Although both taste absoutley different but in a pinch it makes for a good alternative.
- Tenderize the veggies first and then add the sauce and noodles.

Shrimp Udon Stir Fry
INGREDIENTS
- 8 oz Udon noodles
- 1 lbs Shrimps Peeled and Deveined
- 5 cloves Garlic minced
- 1 tablespoon Toasted Sesame Oil
- 1 medium sized Yellow Onion thinly sliced
- 4-5 medium sized Green Beans finely chopped
- 1 medium sized Carrot thinly sliced
- 1 medium sized Bell Pepper thinly sliced
- 1 tablespoon Oyster Sauce
- 1 tablespoon Soy Sauce all-purpose
- ¼ cup Light Brown Sugar
- 1 tablespoon Rice Wine Vinegar
- 1 teaspoon Salt & Pepper
- Green Onions finely chopped (for garnish)
INSTRUCTIONS
- Bring a pot of salted water to boil. As the water boils, add the Udon noodles and cook them until al dente for about 2-3 minutes. After the Udon noodles get cooked, drain the water and keep the noodles aside.
- Heat Sesame Oil in a Pan. As the oil shimmers, Add the Shrimps and cook until they turn pink for about 2-3 minutes.
- Move the Shrimps over to one side of the pan and add minced Garlic, chopped Onions, chopped Green Beans, chopped Bell Peppers, and chopped Carrots to the other side. Saute over medium-high heat for 3-4 minutes or until the veggies tenderize.
- Pour Oyster Sauce, Soy Sauce, Brown Sugar, Rice Wine Vinegar, Salt, and Pepper. Toss to combine everything with the sauteeing veggies
- Add the cooked Udon Noodles. Toss to combine everything. Combine the noodles with the sauce and the veggies.
- Garnish with chopped Green Onions and serve immediately.
