Easter is almost here and it's time to start taking note of some delicious Carrot recipes which you will love to enjoy with your friends at Easter brunch party. The best thing about Easter is obviously Carrot Recipes, Carrot desserts, and some more of those cute pastel-colored desserts.
Talking about Easter gets me so excited about working with those cute orange baby carrots. I tell you that the moment I saw them while shopping, I was instantly drawn to them. It's like they were calling me from a distance, "Pick Me! Love Me!..."
McDreamy that I am, I picked them up and said to myself that I am gonna make something excellent out of these babies. My favorite recipe with carrot is Garlic Parmesan Carrot Fries by unfortunately I didn't have any garlic at my home! (I even forgot to pick it up from the shop)
What Do I Make? What Do I Make? was a constant ringing tone in my ears when I thought about roasting my carrots with Honey, Sriracha and some butter.

Troubleshooting Tips for Roasted Carrots with Honey Sriracha Butter Recipe
This recipe is just roasting of the carrots in the sweet and spicy Honey Sriracha and butter sauce. Sriracha can be a little too spicy for some people hence I have used just 2 tablespoons. You can increase or decrease it as per your choice. However, be careful to not add too much honey. While testing my recipe, I had poured in too much honey and when I tasted it, I found it tasted dull and boring. It lacked spice.
Hence while making the actual recipe, I took special care to not pour too much honey. I also made sure that I toss my carrots in between. So, after every 10-minutes, I would take a spatula (rubber or wooden) and just toss them over. This made sure that my carrots get fried evenly from all sides.
Do not experiment with the cooking time. I can tell you that with experience. I am an impatient person and therefore while testing my recipe, I gave them just 20 minutes to get cooked in the oven. Turns out, I was wrong. It tasted dull, bland and not fried or roasted at all. There was a clear bite in my carrots. Hence, I put them in the oven for another 15 minutes.
I kept in mind, that I check them after 10 minutes and I thought they needed a little more time so I gave them another 5 minutes in the oven. But, if you are happy with the way carrot taste at 30 minutes, no need to cook them for more time. If not you are free to put them in the oven.

Honey Sriracha Glazed Carrots
INGREDIENTS
- 4 qts Medium-sized Carrots
- 1 tablespoon Honey
- 2 teaspoon Sriracha
- ¼ Cup Butter (melted, unsalted)
- Salt
- ⅓ tablespoon Chopped Parsley
INSTRUCTIONS
- Preheat oven to 400F or 204C and line a baking tray with parchment paper.
- Take a small bowl and add honey and sriracha into it. Mix well.
- In another medium-sized bowl take some baby carrots and glaze them with the freshly prepared Honey sriracha sauce, salt, butter, and some parsley.
- Place them all in a baking tray and bake them for almost 35 minutes.
