How to make Lasagna Soup in Insta Pot
Below is a detailed description on making the best Low Carb Lasagna Soup in the Instant Pot. This is the original and BEST Lasagna soup recipe ever, the best comfort food dinner there is.

Heat Olive Oil in a skillet over medium heat. Add the Ground Beef. Crumble and cook ground beef mixture until it browns for at least 7 min. Add chopped onions and garlic to it and cook for 2-3 min.

De glaze the pan with a little beef broth. Add the diced butternut squash, diced tomatoes, marinara and dried herbs. Now pour in the remaining beef broth. Season with salt and pepper.

Add the broken lasagna noodles into the pot just until submerged. Do not stir or push them in.

Add the shredded Parmesan cheese and shredded mozzarella cheese on top. Put the instant pot lid on top. Pressure cook on high for 10 min. Quick release the pressure.
Once the pressure has released, remove the lid from the instant pot. Garnish with a dollop of Ricotta Cheese and freshly chopped Basil leaves. Serve hot.
Add the cooked pasta into individual serving bowls. Top over with the soup, a dollop of ricotta cheese and fresh basil leaves.
Can I cook the Pasta in the soup?
If you're planing to eat this Lasagna soup right away its a good idea to cook the noodles in the hot soup itself.
Donot allow the pasta to stay in the hot soup for longer than 10 minutes or it will soak in all the soup broth.
Even if you;re cooking the soup in a dutch pot, donot let the soup simmer for a long time as the noodles will get mushy.
HINT" If you're going to serve this soup later or you aren't a fan of mushy noodles, then cook the noodles separately until al dente, drain and set aside.
Make the soup broth separately in a dutch pot, instant pot or crock pot.
Right before you serve. add the noodles to the bowl and top over with the soup broth. Top with ricotta cheese, more mozzarella cheese, fresh basil leaves chopped into chiffonier and serve.
What kind of pasta should you use for lasagna soup
You can use Lasagna noodles broken into bite sized pieces or use Mafalda Pasta or any small sized pasta like elbow macaroni or fusili or bow tie or rotini.

INGREDIENTS
- 2 tablespoon Olive Oil
- 1.5 lbs lean Ground Beef
- 1 medium sized Butternut sqush peeled and cut into small dices
- 1 medium Yellow Onion diced
- 4 cloves Garlic minced
- 2 cups Marinara Sauce
- 5 cups Chicken Broth low sodium
- 1 15oz diced tomato can
- 1 teaspoon Dried Basil
- 1 teaspoon Dried Rosemary
- 2 teaspoon Italian Seasoning
- ¼ teaspoon red pepper flakes
- 8 sheets Lasagna Noodles broken into bite sized pieces
- 1 cup Parmesan cheese freshly grated
- 1 cup Mozzarella Cheese grated
- 1 cup Ricotta Cheese
- salt and pepper to taste
- Fresh Basil leaves thinly chopped for garnish (can use fresh parsley)
INSTRUCTIONS
- Turn the saute mode on in the instant pot. Heat Olive Oil in it for 2 min. Add the ground beef. Crumble and cook for 4-5 min or until no longer pink.
- Add chopped onion and garlic and cook for 3-4 more minutes. De glaze the pot with a little beef broth.
- Add the chopped butternut squash, diced tomatoes, marinara sauce, dried herbs. Toss to combine. Pour in the rest of the beef broth.
