Remember to leave about 1/2" border around the edges of the Tortillas. Also roll as tightly as possible using a plastic wrap. Also do not forget to refrigerate before cutting.

Hint: I like to refrigerate for at least 24 hours before cutting. Refrigerating properly makes sure that you get perfect sized pinwheels which donot open after cutting.

Cooking Variations

Nuts - If you want, you can add Nuts like Pistachios, Walnuts or Pecan Nuts to this. It will give a nice nutty bite to these Cranberry Feta Pinwheels.

Mascarpone - Substitute Feta Cheese with Mascarpone Cheese for that perfect creamy and sweet taste. Remember to beat Mascarpone with Cream Cheese using a handheld mixer before mixing them with the Dried Cranberries and Chives.

Goat Cheese - You can replace Feta Cheese with Goat Cheese as well. Its got a similar taste and texture like Feta Cheese and tastes incredibly good.

Herbs - Feel free to include just a bit of dried Rosemary to this mixture of Cheese and Cranberries. It makes this taste so delicious.

Leftover Cranberry Sauce - Replace Dried Cranberries with homemade Cranberry Sauce. Its a great combination with Cheese and tastes um-aazzzzing!!

Orange Zest - Cranberry and Oranges are like a match made in heaven. So feel free to include just a bit of Orange Juice and garnish with some fresh Orange Zest to liven up the flavours in this Cranberry Feta Pinwheels.

Spinach Tortilla - For a festive Green Color, use Spinach Tortillas instead of Flour Tortillas. Also, you can arrange these Cranberry Pinwheels in the shape of a Christmas tree for a festive look, just like my Christmas Tree Pull Apart Appetizer | Best Christmas Appetizer Recipe or these Cheesy Spinach Dip Puff Bites - Easy and Cute Christmas Appetizer

Storage

You can store these Cranberry Feta Pinwheels in the refrigerator for upto 4-5 days. However, remember to reheat them in the oven before serving.

You can reheat these Pinwheels on a parchment paper lined dish at 375F until heated through.

Can these Pinwheels made ahead of time?

Yes, of course. Making Pinwheels ahead of time will save you so much time on the main day. You can make these at least 24 hours ahead of time. Reheat right before serving and serve them warm.

How do you make Pinwheels not soggy?

If you feel that too much moisture will make these soggy, then create a quick moisture barrier. Use fresh lettuce or Spinach to lay over the Tortillas and then add the Cheese mixture. This will prevent them from getting soggy.
