This Asian Cucumber Red Onion Salad is basically just like any other Cucumber salad. Here, I have used Cucumber along with some Red Onions, some Diced Tomatoes, and some Black Olives. While the salad dressing is made with Sourcream, Mayo, Rice Vinegar, mined Garlic, Sesame Seeds, and Red Chili flakes.
The Veggies for this salad
Ideally, this salad is made with just cucumber or cucumber and red onions. However, I took the liberty to add some Tomatoes as well. It just tastes so good with Cucumber and Red Onions and also looks so very colorful.
Cucumber: Cucumber is an essential part of this salad. You can use English Cucumber. However, if you are using those, then you do not need to peel off the skin of the Cucumber. And you cut circles and then you half them. English Cucumber has a firm texture and goes very well for this salad.
Red Onions: This Cucumber Salad is just incomplete without Red Onions. Red Onions add a sweetness to this recipe and also brings in a wonderful crunch. Moreover, Red Onions are a staple for every Cucumber salad recipe, especially, in Asia.
Tomatoes: Tomatoes bring in a sourness to this salad. Also, Tomatoes are a rich source of Vitamin C. It helps improve your appetite. Of course, Tomatoes tastes brilliant in this Asian Cucumber Red Onion Salad.
The Garlic Vinegar Dressing
The dressing for this salad is actually my own recipe. I developed this recipe over the years based on taste and texture. This Dressing tastes sweet and spicy. There is sweetness because almost all Asian dressings are generally sweet.
However, the garlic and the Red Chili Flakes brings in a nice spiciness to the dressing. The Rice Vinegar brings in a unique flavor to this dressing. The best part is the Sesame seeds which improve the overall texture of this salad and make it taste nutty.
