Caramel Apple Cinnamon Pecan Cobbler is a warm and comforting fall recipe that cannot get any better. There is that gorgeous bubbly apple cinnamon filling on the inside followed by a cakey cobbler topping and lastly, everything is made heavenly with a dash of pecan and caramel.
In a medium-sized bowl add sliced apples.Add Brown Sugar, Granulated Sugar, Ground Cinnamon, Ground Nutmeg, lemon juice, and corn starch. Mix well.Add chopped pecan nuts and mix well.
Make the Caramel Sauce
In a heavy bottom pan melt butter over low heat. Add brown sugar and milk and mix well. Bring it to boil stirring continuously for about 10-12 minutes on low heat. After its nice and thick, turn off the heat and stir in some vanilla. Let it come to room temperature and then pour over apple filling. Don't wait too long or else it will harden up. In case it does harden up, then heat it again.
Make the Topping
Take a medium-sized bowl and add in flour, baking powder, light brown sugar, granulated sugar, and some cold butter cubes. Use a pastry blender to bring it to a mealy consistency. You should also add some salt if you are using unsalted butter. I skipped salt since I am using salted butter in here.Lastly, add some boiling water and give it a good mix. If it becomes too liquidy add some flour and balance the texture. See the video for the texture of the topping.
Additional Topping
In a small bowl mix sugar with cinnamon and sprinkle it over your cobbler. This is just for that extra taste. But, be careful not to add too much cinnamon.
